STEP 1

How to make kefir muffins in silicone molds? Prepare your food. Remove kefir and eggs from the refrigerator in advance, they should be warm, then the muffins will rise better. If you don't have much time, then put the eggs in warm water and pour a little hot water into the kefir. Take refined, odorless vegetable oil.
STEP 2

Wash and then dry the eggs. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Then break the eggs into a bowl, add sugar and beat well, preferably with a mixer. You should get a fluffy, light mass.
STEP 3

Pour kefir into the eggs, add oil, salt and soda, mix well, you can just use a whisk. Read about the intricacies of using soda in baking in a separate article at the end of the recipe.
STEP 4

Add pre-sifted flour in portions. Do not add it all at once, add a little at a time, mixing the dough well after each addition. The result should be a mass similar in consistency to rich sour cream. Batter that is too thick will result in tough muffins. You may need a little less or more flour, check the consistency. Read about the properties of flour in the article at the end of this recipe.
STEP 5

Knead the dough well with a whisk.

Grease the silicone mold a little with vegetable oil. You can put special paper liners for cupcakes, as I did, then you no longer need to grease. Fill them 2/3 full with batter because the cupcakes need to rise well. From this amount of dough I got 12 cupcakes. You may get a different amount, it depends on the size of your forms.
STEP 7

I made some of the cupcakes in separate molds. Bake the cupcakes in the oven, preheated to 180 degrees for 15-20 minutes. The times are approximate, please be guided by the performance of your equipment. Read about ovens in the article at the end of the recipe. The cupcakes should rise well and be golden. Check readiness with a wooden stick or toothpick. Ready cupcakes can be sprinkled with powdered sugar.
