Hello! A recipe for yeast-free kefir dough caught my attention. It often happens that you need to quickly bake pies or a pie, but you don’t have time to wait for the dough to rise. Today I kneaded a double portion of this wonderful dough twice. It’s very convenient. I sifted the flour (I take equal parts of first and highest grade wheat flour. And yet, I am more accustomed to mixing soda with flour. This is how the reaction occurs when combined with liquid components. I carefully whisked the butter and kefir by hand into an emulsion, adding salt and sugar. I kneaded the dough with a wooden spatula in a circular motion, pouring in the flour in parts. The dough was soft, pliable. When cut, it was bubbly. The amount of flour indicated in the recipe was just right for me, I even added a little for dusting when forming the pies. A double portion yielded 18 pies on two baking sheets. The dough is very tasty, the pies turned out soft and aromatic. I sincerely thank the author for the recipe for the dough, which can be called “lifesaver dough.” Indeed, I kneaded it very quickly, immediately formed the pies and put them in the oven, no need to wait for proofing My pies filled with eggs and onions took 25 minutes to bake.
