STEP 1

There is no need to chop them too much, you should feel them. Then fry the nuts in a dry frying pan. Keep the heat low and stir them all the time so they don't burn. Then cool the nuts.
STEP 2

Prepare a sponge cake. How to make a sponge cake? Break the eggs into a large bowl and add sugar. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Beat eggs with sugar on high power mixer until fluffy and light.
STEP 3

Then add honey, cognac, soda and vanillin to the eggs. It is better if the honey is liquid. If it is thick, then melt it first in a water bath. Take natural and high-quality honey. Add the sifted flour in portions, carefully mixing it into the dough with a silicone spatula each time. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking. Then add a handful of toasted nuts. Stir.
STEP 4

Pour the finished dough into a baking dish (mine is 20 cm in diameter) and place in the oven preheated to 180 degrees for 40-50 minutes. Remove the finished sponge cake from the mold and cool. Let it sit for a few hours. Preferably in the refrigerator, wrapped in a bag or cling film. Otherwise, it will be difficult to cut into cakes due to its softness. Cut the rested sponge cake into 4 layers and soak in sugar syrup (water, sugar).
STEP 5

Prepare the cream. For the cream, take soft butter and beat it with boiled condensed milk. Take the highest quality, natural oil that complies with GOST. Take it out in advance to soften it. Also choose the best condensed milk, from a trusted manufacturer. Without vegetable fats and food additives. The composition should contain only two ingredients: milk and sugar. You can cook condensed milk yourself at home.
STEP 6

Assemble the cake. Grease each sponge cake with cream and sprinkle with roasted nuts.
STEP 7

Cover the finished cake with the remaining butter cream and condensed milk in a thin layer. Then put it in the refrigerator so that the cake is soaked and the cream hardens. At this stage, you can simply sprinkle the top and sides of the cake with ground nuts or biscuit crumbs. Or you can decorate it more interestingly.
STEP 8

Whip the cream with the powdered sugar and smooth the sides of the cake. How to whip cream correctly? Take cream with a fat content of at least 33%. The whipping container and the cream itself must be cold. Beat with a mixer at minimum speed, gradually increasing the speed. How do you know if the cream is whipped enough? The creamy mass should retain its shape and not spread. Stop whisking at this point. Otherwise the cream will turn into butter.
STEP 9

Separately, melt the chocolate and cream and cool to room temperature. This can be done in a water bath or in the microwave. Take any chocolate, milk or dark will do, choose according to your taste. If the mass is thick, add a little more cream.
STEP 10

Drizzle chocolate over the top of the cake and use a spoon to create nice drips. Decorate the top of the cake with chocolates and cookies (or other favorite treats). Place it in the refrigerator so that all this beauty hardens. Enjoy your tea!
