How to salt carp caviar

STEP 1
How to salt carp caviar at home? Prepare the necessary ingredients. You can use table or sea salt. Take caviar from any river fish (carp, carp, perch), I took it from a carp weighing 3 kg.
STEP 2
First, carefully rinse the caviar with water (preferably filtered). Then carefully grind the caviar with a spoon, using a colander to get rid of the films; the holes in the colander should be larger than the size of the caviar. Or you can punch the caviar using a grater with large holes.
STEP 3
Place the caviar in a glass or ceramic container; do not use metal or plastic containers, as they may leave an unpleasant odor and spoil the taste of the caviar.
STEP 4
Prepare the brine - dissolve the salt in a ladle of water and bring to a boil, boil for another 2 minutes. If you wish, you can add bay leaves, peppercorns, or other seasonings to the brine that can be easily removed later.
STEP 5
Pour salted boiling water over the caviar and stir well with a fork so that the brine is distributed between all the caviar. The caviar will immediately change color, it will turn orange and you will see which eggs have not received enough brine. Leave the caviar to salt for another 2 hours.
STEP 6
Drain the salted water using a colander and cheesecloth, leave the caviar to drain for another 5-7 minutes, then put it in a suitable container, cover with a lid or cling film and put it in the refrigerator to cool for 2 hours.
STEP 7
You can additionally salt the finished caviar to your taste or rinse it with boiled water, then it will be lightly salted. You can safely spread the caviar on bread with butter and serve it as a snack or with tea. Bon appetit!
