    How to salt whole herring at home? Prepare the indicated ingredients for salting fish. Particular attention should be paid to the choice of herring - it should have a whole skin, without yellow or other spots. Fish is usually sold frozen. The marinade will be prepared based on 1 liter of water. For spices you will need bay leaf, black peppercorns, allspice. You can also add other spices in the seeds to your taste. It is better to choose coarse salt

    For the recipe, choose carcasses of any standard size; the prepared brine is enough to completely immerse two fish in it. Before salting, defrost the fish in a gentle way: in the refrigerator or at room temperature on the table. Then rinse well under running cold water. There is no need to cut the fish, it will be salted as a whole carcass.

    To prepare fish brine, you need to pour 1 liter of water into a pan (enamel or stainless steel), add salt, sugar, bay leaf, allspice and black peppercorns. Place the pan on the stove and bring the solution to a boil. Cook for 2-3 minutes. Allow the brine to cool to room temperature.

    The fish can be salted in the pan where the brine was prepared (if it is the right size), or you can use a container in which the fish will lie without deforming. Pour the cooled brine over the fish. If the fish floats up and is not completely covered with brine, then it should be pressed down with something. Place the herring in brine in the refrigerator for 2 days. During this time you will get lightly salted fish. For saltier fish, it can be left in the refrigerator for 3 days.

My husband wanted to eat some herring, and there were just a couple of fish in the freezer. I would prefer to buy ready-made, but I need to empty the freezer) I found a recipe on the website that tells how to pickle whole herring at home. The salting process itself is very simple and does not require any special skills. The main thing is to rinse the fish thoroughly to remove blood and find a suitable container. Unfortunately, I didn’t find such dishes, so I put the fish in a large container and pressed them down with a plate. The herrings were placed in such a way that we had to add more brine. They were salted for two days, because I planned to marinate them in the future. It tastes just right to me, just enough salt. It's another matter to cut up this fish) It seems that I managed it, the trimmings were used for pate. By the way, the caviar and milk were also perfectly salted. If there is no goal to marinate this fish, then you can keep it in brine for another day.
