How to freeze fresh champignons

STEP 1

How to choose mushrooms? Buy fresh champignons of medium size, snow-white color without spots, damage, or the smell of rot. They should not be slippery to the touch. Thoroughly rinse the mushrooms from soil and sand under running warm or cold water. Cut out damaged areas, if any. Miniature mushrooms up to 2 cm in size do not need to be cleaned; just rinse them well. It is recommended to clean larger champignons from films.
STEP 2

Place the mushrooms on a kitchen towel. Leave for 20-30 minutes so that all the moisture is absorbed into the fabric. It is important to dry the mushrooms well, otherwise the water will expand when frozen and damage the shape of the mushrooms, and they will taste watery.
STEP 3

Next, chop the mushrooms, depending on what kind of dishes you are planning and like to cook. I usually cut the mushrooms into quarters and add them to pastas or meat dishes.
STEP 4

You can also cut the mushrooms into slices. They are good to add to soups. In this case, there is no need to pre-defrost. If you like to make pies with mushrooms, then the champignons can be finely chopped. Small champignons can be frozen whole. They will look beautiful in casseroles, pizzas and holiday dishes.
STEP 5

Place the chopped mushrooms in plastic bags. Be sure to release excess air and seal tightly. If the bags don't have a zipper, just tie them tightly. Place in the freezer. Turn on the quick freeze function for 1-2 hours. If there is no such mode, it will take longer to freeze (about 3 hours). You can first freeze the mushrooms on a tray (laying them out in one layer), and then put them in a bag and put them in the freezer.
