STEP 1
How to smoke red fish at home? Prepare everything you need according to the list. For this recipe, it is better to use fresh steaks, but frozen ones can also be used. If you have frozen fish, then first defrost it at room temperature. Rinse the steaks and dry them with paper towels so that no excess moisture remains on them. Rub the fish on all sides with salt (I used a little more than half a teaspoon).
STEP 2
Wrap the fish in cling film or place it in a plastic bag and place it in the refrigerator for several hours. My steaks were salted all night.
STEP 3
Prepare sawdust before smoking. What sawdust is best to use? Sawdust from fruit trees is great for smoking; I usually use cherry wood. Soak them in cold water for a while.
STEP 4
Remove the salted fish from the refrigerator and dry with napkins or kitchen towels.
STEP 5
Prepare your smoker. Cover the bottom with foil, light firewood or charcoal, wait until it burns out. Squeeze out the sawdust from the water and place it in a thin layer on the coals.
STEP 6
Place the steaks on the grill and close the smoker lid. Maintain the temperature at about 100 degrees and smoke the fish for about half an hour.
STEP 7

STEP 9
Hot smoked red fish is ready! It can be left as is, or it can be flavored with ground pepper and rosemary.
STEP 10
To do this, mix 1 tsp in a small container. vegetable or olive oil, ground black and red pepper, add a pinch of dry rosemary.
STEP 11
Using a silicone brush, apply the mixture to the top side of the smoked steak and leave it like this until it cools completely. Place the fish in the refrigerator for further storage.
STEP 12
Sandwiches with toasted bread and avocado are very tasty with this fish.
