STEP 1
How to make a honey cake in a water bath? First, prepare the necessary ingredients for the cream. Instead of yolks, you can use whole eggs. It is advisable to take the butter at room temperature or melt it first. The cakes are soft, and the cream absorbs medium. If you need a clear layer of cream cake, then it is better to make more cream, for example, based on 400-500 ml of milk.
STEP 2
Mash the yolks with sugar in a bowl. For cooking in a water bath, it is better to take a metal bowl that will not crack due to temperature changes. If you use a glass bowl, like I do, then you need to heat it gradually. Do not place directly on a hot pan of boiling water.
STEP 3
Add milk, flour and soft butter. Mix everything until smooth.
STEP 4
Place the bowl of cream in a water bath. Cook the cream, stirring constantly, until thickened. The mark from the whisk should not linger. If you have the skill of cooking custard over low heat in a saucepan without a water bath, you can significantly save yourself time and effort.
STEP 5
Remove the finished custard from the heat, cover with cling film “in contact” and cool.
STEP 6
While the cream is cooling, make the cakes. Take the highest grade flour. Adjust the amount of sugar to your taste. Any honey will do. I have buckwheat. Take the butter at room temperature, so take it out of the refrigerator in advance. Turn on the oven to 180 degrees.
STEP 7
In a bowl, combine eggs, sugar, butter, honey, soda and vodka. Mix everything thoroughly until smooth.
STEP 8
Place the bowl in a water bath and cook the mixture, stirring, until it triples in volume. Remove the bowl from the heat and cool the mixture slightly.
STEP 9
Add the sifted flour little by little. Knead into a soft, homogeneous, slightly sticky dough. It is important not to overwhelm the dough with flour in an attempt to completely remove the stickiness. STEP 10
In any case, the finished dough will stick to your hands, because it contains honey, but it will not remain on your fingers when you remove your hands.
STEP 11
Divide the dough into 6-7 equal parts.
STEP 12
Roll out each part into a thin layer on siliconized high-quality parchment. Cut out an even circle from the dough. Leave the trimmings along with the cake. You can choose the right parchment paper by reading the information about the types of parchment at the end of the recipe.

Grind the cake scraps into fine crumbs.
STEP 15
Spread the cakes with cream and stack them on top of each other.
STEP 16
Sprinkle crumbs over the top and sides of the cake. Place the cake in the refrigerator overnight to soak.
