STEP 1
How to make homemade sprat sprats? Very fast and easy! Prepare the necessary ingredients according to the list. You can take fresh or frozen fish. Frozen sprat must be defrosted on the bottom shelf of the refrigerator. Read about the intricacies of defrosting in a separate article under the steps. Spices can be added to your taste. Coriander beans will do. If you wish, you can add 1 tbsp. l. liquid smoke so that the sprats have a pronounced smoked taste
STEP 2
Wash the sprat. Remove the head and entrails. Rinse carefully again, trying to keep the upper silver scales intact. What kind of fish, besides sprat itself, is suitable for homemade sprats? Any small fish of the herring family: herring, anchovy, White Sea and small Atlantic herring.
STEP 3
Pour boiling water over the tea leaves and let the tea steep for about 10 minutes.
STEP 4
Then strain the drink. Add sugar and salt to the tea and stir.
STEP 5
Crumble 1 bay leaf into a saucepan, add half the black peppercorns and clove buds.
STEP 6
Place the prepared sprat on top. Crumble the remaining bay leaves onto the fish, add pepper and cloves.

Place the saucepan over medium heat and bring to a boil. Reduce heat to low and cook the sprat for about 1 hour without stirring. At most, you can shake the saucepan slightly.
STEP 8
Remove the finished sprats from the heat. Cover the saucepan with a lid and leave for 3 hours at room temperature.
STEP 9
Then put the sprats into jars, close the lids and put them in the refrigerator for 5-6 hours until completely cooled. Serve ready-made sprat sprats with tea leaves at home. Bon appetit!
