Homemade classic dumplings
Ingredients
Step-by-step preparation
STEP 1
How to make classic dumplings? Prepare the necessary ingredients. You can use ready-made minced pork and beef, but it’s best to make it yourself. Peel the onion, wash and dry.
STEP 2
Place the ground pork and ground beef in a deep bowl.
STEP 3
Chop the peeled onions and grind in a meat grinder with a fine grid. You can use any onion you like. But the more onions, the juicier and softer the finished minced meat will be. But it all depends on your taste.
STEP 4
Salt, pepper and mix everything well. For me, there is nothing better than regular ground black pepper, but you can use white or green ground pepper. Cover the bowl and refrigerate for 30 minutes to allow the meat to mature.
STEP 5
While the meat is in the refrigerator, make the dough. To do this, pour water at room temperature into a deep bowl so that your hands are comfortable. Break a raw egg into a bowl, add oil, salt and mix everything until smooth.
STEP 6
Sift most of the flour into a bowl with the eggs and begin kneading the dough, gradually adding flour. Focus on the consistency of the dough, not the volume of flour.
STEP 7
The dough should be elastic, tender, and not stick to your hands. Gather the finished dough into a ball and cover with a towel or film. Leave it on the kitchen counter for 20 minutes.
STEP 8
Dust the counter with a little flour and turn the dough onto it. Divide the dough into parts and roll each into a thick rope. Then cut them into small pieces - according to the number of dumplings. While you are working with one part of the dough, cover the rest with a towel so that it does not dry out.
STEP 9
Roll out the cut pieces of dough into thin flat cakes. It is desirable that they are the same and, if possible, round.
STEP 10
Spoon minced meat onto each rolled out flatbread.
STEP 11
Bring the opposite edges of the cake together and seal them tightly. You will get dumplings like this.
STEP 12
Then bring the opposite ends of each dumpling together and press firmly. We get these round dumplings. If you have made a lot of them, then sprinkle a flat surface with flour and place the dumplings in one layer and not close together. Dust them with flour again and place them in the freezer to freeze. Then put it into bags and put it back in the freezer.
STEP 13
If you don't like or don't want to make dumplings by hand, use a dumpling mold. And although they will lose their individuality, they will remain just as tasty.
STEP 14
When the family wants dumplings, put a pot of water on the stove, bring the water to a boil, and add salt. Place dumplings into boiling water one at a time. Stir gently and cook over medium heat until tender.
STEP 15
Bon appetit!
