    Wash the carrots in running water with a brush, peel them, grate them on a Korean carrot grater so that they are a nice, even strip. If the salad needs to be prepared in large quantities, then working with a hand grater will be long and laborious. In this case, you can use a food processor with a special attachment for Korean carrots. Place the grated carrots in a deep bowl, add sugar and salt, stir.

    Peel the onions and cut them into cubes with a knife. Heat vegetable oil in a frying pan. Place chopped onions on it. Fry it until golden brown over medium heat for about 3 minutes. Remove the pan from the heat. Remove the onion from the oil and pour the oil into a bowl. Add soy sauce, ground red pepper, pressed garlic, ground coriander, sweet paprika and vinegar. Stir the mixture well to combine the spices.

    During this time, juice will appear in the bowl with the carrots; drain it so that it does not dilute the taste of the spices and the salad does not become watery. Pour the dressing over the grated carrots. Mix the salad well and refrigerate for a couple of hours. The salad can be served. However, the longer the carrot salad sits in the refrigerator, the richer and brighter its taste will be, so ideally it is better to leave this appetizer to soak in the refrigerator overnight.

I cooked mainly for my husband, he is a big fan of everything spicy. I deviated a little from the recipe, my husband really asked me to add daikon, but on the contrary, not to add onions. It was an experiment. In general, it was a success. I used regular spices, a ready-made mixture for Korean carrots. After draining the juice, I poured boiling oil over it; to my taste, the spices were revealed better this way. Our salad was infused from morning until lunch, but my husband couldn’t stand it any longer and started tasting it. It turned out very tasty, moderately spicy, aromatic and tempting. Definitely one of my favorite snacks.

It's time to prepare the most delicious and juicy winter carrot salad and I wanted some new dressing. I recently saw this recipe in reviews and the composition of the salad caught my attention. Although I have a grater for Korean salads, I didn’t want to grate a kilogram of carrots on it, so I used a special attachment on a meat grinder) For the dressing I took everything suggested in the recipe. I fried the onion in oil, I didn’t fuss too much with cutting the onion, I chopped it coarsely. Then I happily ate the fried onions with bread) I combined all the spices in a bowl and then poured the oil into it. The mixture hissed, it’s good that it didn’t burn. After all, it was necessary to do the opposite; if anyone cooks, do not ignore this sequence. Then I dressed the salad and let it sit overnight in the refrigerator. The salad is very tasty, juicy and spicy. Very similar to regular Korean carrots, but you can smell the soy sauce. Replacing the usual garlic with onions gave the carrots a new interesting taste. I liked the recipe, my husband did too)

It turned out delicious! There are a lot of options for preparing carrots, I will also be happy to use this recipe! And I usually put dry spices in a heap on the squeezed carrots along with chopped garlic and immediately after removing the fried onions from the oil, I pour the hot oil over the spices. The aroma of spices in the kitchen is beyond words!
