STEP 1

How to make homemade carrots? Prepare all the necessary ingredients. It is better to take young and juicy carrots, then the salad will turn out more tasty, juicy and tender. You can change the set of spices or reduce/increase their quantity according to your taste.
STEP 2

Wash the carrots in running water with a brush, peel them, grate them on a Korean carrot grater so that they are a nice, even strip. If the salad needs to be prepared in large quantities, then working with a hand grater will be long and laborious. In this case, you can use a food processor with a special attachment for Korean carrots. Place the grated carrots in a deep bowl, add sugar and salt, stir.
STEP 3

Peel the onions and cut them into cubes with a knife. Heat vegetable oil in a frying pan. Place chopped onions on it. Fry it until golden brown over medium heat for about 3 minutes. Remove the pan from the heat. Remove the onion from the oil and pour the oil into a bowl. Add soy sauce, ground red pepper, pressed garlic, ground coriander, sweet paprika and vinegar. Stir the mixture well to combine the spices.
STEP 4

During this time, juice will appear in the bowl with the carrots; drain it so that it does not dilute the taste of the spices and the salad does not become watery. Pour the dressing over the grated carrots. Mix the salad well and refrigerate for a couple of hours. The salad can be served. However, the longer the carrot salad sits in the refrigerator, the richer and brighter its taste will be, so ideally it is better to leave this appetizer to soak in the refrigerator overnight.
STEP 5

The aroma of spices from carrots at home is very strong, so it is better to cover the bowl with the salad so that other foods in the refrigerator do not become saturated with this smell. Bon appetit!
