I bought a pork knuckle, found a recipe for ham from the knuckle on the website, and decided to cook it. I didn’t deviate from the recipe, I just refused to use cumin and I didn’t have any dried tomatoes. To preserve the pink meat color, I took nitrite salt (about 5 grams), so I had to be patient and wait three days. To prevent water from penetrating under the film during cooking, I additionally put the ham in a baking bag, tied it tightly, and placed it in the pan so that the knot of the bag remains above the surface of the water. Cooked on low heat for three hours. Cooled in a bag under cold water and then put in the refrigerator until completely set. The ham turned out excellent! Fragrant, very tasty!
