Green bean tursha with carrots and garlic

    Boil the beans in boiling water for 5-7 minutes, but make sure the beans remain hard.

    Drain the beans in a colander.

    Grate the carrots on a coarse grater. Slice the hot pepper.

    Crush the garlic directly into the husk.

    Place in a jar in layers: beans, garlic, a little pepper, carrots, compact tightly, and then in the same sequence until the jar is full (leave about 4 centimeters on top). Boil 1 liter of water, add salt to it and cool. Pour cold brine into a jar. Leave for a day at room temperature without covering. Then close with a tight lid and put in the refrigerator.

    After 7 days the tursha is ready. You can eat it immediately, pouring vegetable oil and sprinkling with chopped onions, or you can drain the brine, put it in a sterilized jar and pasteurize (0.5 l jars - 25 min, 1 l - 35 min). After pasteurization, roll up.
