STEP 1

How to make green bean salad for the winter? Prepare the vegetables.
STEP 2

Wash the beans and cut into pieces 3-4 cm long. Cut off the tails.
STEP 3

Cut the tomatoes, blanch and remove the skin. The texture is nicer without it.
STEP 4

Boil the beans for 5 minutes in boiling water.
STEP 5

Cut the tomatoes into cubes, place in a large saucepan and simmer over low heat for 15 minutes from the moment of boiling.
STEP 6

Peel and chop the onions and carrots. Sauté them in a frying pan with sunflower oil.
STEP 7

When the tomatoes become soft, add salt, sugar, bay leaf and peppercorns.
STEP 8

Also add onions and carrots.
STEP 9

And beans. Simmer over low heat for 20 minutes from the moment it boils.
STEP 10

After 20 minutes, add washed and chopped herbs, vinegar and peeled and sliced garlic. Simmer for 5 minutes and, without removing from the stove, place in sterilized jars. Close (roll up) the lids. Cool upside down under a towel (blanket).
