Georgian-style nut-beetroot snack

An intriguing appetizer with an incredible range of flavors. I once baked large beets in the oven to make a salad with garlic and mayonnaise, but there was no garlic in the kitchen, and it was already late in the evening. Making mayonnaise at home is not a problem, and it can be easily replaced with sour cream, but no one has yet been able to replace garlic with anything, so I had to rummage through my memory to see what else is made from baked beets. I couldn’t find anything suitable in my memory, but in my mobile phone’s notebook I found a culinary recipe for a Georgian nut-beet snack once told by one of my friends, once written down just in case and just as happily forgotten. It’s good that the phone’s memory is in some ways superior to human memory, at least in the ability not to forget anything recorded and to reproduce everything very accurately at any moment. Thanks to this, I didn’t have to go without a snack for dinner.
