Step-by-step preparation
STEP 1
How to cook Georgian puri? Heat the water a little, to about 30°C. The water should be a little warm, but not hot. Pour dry yeast into lukewarm water and stir thoroughly until the yeast is completely dissolved. Set the container aside for 2-3 minutes for the yeast to begin its work.
STEP 2
Take wheat flour. To bake flatbreads, use high-quality flour of the highest grade. Place a sieve over a container of yeast water and sift the wheat flour through it. By sifting, the flour will be filled with oxygen, which will make the dough more tender and soft, and will also remove unnecessary impurities and debris that may be in this product. Also add salt.
STEP 3
First use a spoon and then use your hands to knead the dough. Knead the dough for about 10 minutes. If necessary, you can add flour, but do not beat the dough, otherwise it will turn out very tough and the cakes will not taste good. Cover the container with the dough with a towel and place in a warm place for fermentation for 1.5-2 hours. During this time, the gluten will swell, and the dough should rise and increase in size.
STEP 4
Divide the risen dough into 2 equal parts. Roll each portion into a ball, cover with cling film and let the dough balls rest for another 15 minutes.
STEP 5
Take the first piece and form a puri from it, creating a boat shape: first stretch the piece with your hands into a rope, and then a little wider so that a diamond forms in the center. Make a hole in the center. Do the same with the second piece. Transfer the cakes to a baking tray lined with baking paper and cover with a towel to prevent the dough from drying out. Leave the formed puris to proof for another 20 minutes.
STEP 6
While the cakes are rising, preheat the oven at 230-250°C. The duration and temperature of baking the flatbreads depends on the temperature and design of your oven. After 20 minutes, place the pan with puri in a preheated oven and bake the flatbreads for 15 minutes.
STEP 7
Place the finished flatbreads into a bread bin and cover with a towel. It is advisable to serve puri hot, but they are also good when cooled. This amount of ingredients made 2 large cakes.
