Fried zucchini with tomatoes and mayonnaise

STEP 1

How to fry zucchini with tomatoes, garlic and mayonnaise? Prepare your vegetables first. Choose young zucchini with thin skin. Choose tomatoes that are ripe but strong. It is desirable that the tomatoes be approximately the same in diameter as zucchini. This will make the dish look neater. It will work out very nicely if the zucchini and tomatoes are small in diameter. In this case, towers of vegetables can be pinned onto skewers.
STEP 2

Wash the zucchini, dry and cut into slices about 1 cm thick. Salt the zucchini, mix and leave for about 10 minutes. Drain off the released juice. Salt and pepper the zucchini again.
STEP 3

Wash the tomatoes and cut into slices approximately the same thickness as the zucchini.
STEP 4

Prepare the necessary ingredients for the sauce. You can make your own mayonnaise. You will find recipes for homemade mayonnaise after the last step.
STEP 5

Wash the dill, dry and finely chop.
STEP 6

Peel the garlic and pass through a press.
STEP 7

Combine mayonnaise with salt, ground pepper, garlic and chopped dill.
STEP 8

Mix everything until smooth.

STEP 10

Transfer the fried zucchini to a paper towel to absorb excess fat.
STEP 11

Place tomato slices in a single layer on a large platter. Brush each tomato with mayonnaise sauce.
STEP 12

Place slices of fried zucchini on top.
STEP 13

Also coat the zucchini with mayonnaise. Garnish the dish with fresh herbs. Bon appetit!
