Fried squid in a frying pan with onions

STEP 1
How to fry squid with onions? Prepare all the necessary ingredients. Today I suggest you fry them on a grill pan. In it they come out with a beautiful pattern, do not absorb a lot of oil and are much more convenient to cook. But if you don’t have such a frying pan, you can do all this perfectly well on a regular one with a non-stick coating.
STEP 2
Peel the onion and cut into four parts. Place everything in a bowl, add salt and a little vegetable oil. Mix gently so as not to break the structure of the quarters. You can use absolutely any onion, and the more varieties you take, the more interesting the dish will look and taste.
STEP 3
I prefer to buy prepared squid carcasses, but even these need to be properly prepared before frying. I think many people have encountered the fact that during heat treatment the carcass shrinks and becomes much smaller. To do this, you need to remove a thin film from the squid carcass; it is this film that shrinks and warps the squid. It can be easily picked up by fingernails and removed without damaging the carcass. Do the same from the inside, turning the squid inside out.
STEP 4
Salt and pepper the carcasses, sprinkle them with lime juice. Then turn them right side out again. I don’t recommend salting and peppering them on your face; after cooking, they will look dirty or have gunk stuck to the entire surface.
STEP 5
Pour vegetable oil into a grill pan and add one or two sprigs of thyme. It can be replaced with dry rosemary sprigs. Peel the garlic, cut it and place it between the grooves.
STEP 6
Place the pan over medium heat and heat the oil for 1-2 minutes. During this time, the oil will heat up and begin to acquire aroma. Push the thyme and garlic to two sides of the pan and add the squid. Press on top with a special grill lid. If you don't have one, use another clean, heavy frying pan. It will press down the carcasses and then they will acquire the characteristic grill stripes.
STEP 7
Remove the thyme sprigs and cook each side for 3-4 minutes. Do not keep the squids in the pan for a very long time, this will make them “rubbery” and nothing can fix this.
STEP 8
After removing the cooked squid from the grill pan, spread out the prepared onions. Fry it on a lower heat for 5-7 minutes, turning once. If desired, you can add other vegetables; I added young carrots and radishes. Add the fried vegetables to the squid and serve.
