Fried liver pies

Ingredients
Step-by-step preparation
STEP 1

Sift the flour, add sugar, salt and yeast to the flour.
STEP 2

Mix everything well.
STEP 3

Add water and milk and continue kneading.
STEP 4

Add the egg and knead further.
STEP 5

Add oil.
STEP 6

Knead the dough until completely homogeneous and gluten is developed.
STEP 7

Place in a warm place to rise for an hour or two until it has at least doubled in size.
STEP 8

Like this.
STEP 9

Knead it.
STEP 10

Leave to rise a second time.
STEP 11

Soak the liver in milk for 30-40 minutes.
STEP 12

Wash the heart and dry it slightly.
STEP 13

Trim the cartilage and fat from the heart.
STEP 14

Cut the lung into pieces convenient for cooking.
STEP 15

Let the heart and lungs cook. As soon as it boils, skim off the foam.
STEP 16

When the foam ends, add carrots, bay leaves and onions and cook for about 1.5 hours. 5 minutes before cooking, add bay leaf - for aroma, but not for bitterness.
STEP 17

Pass the boiled offal through a meat grinder. Pass the liver (raw) through a meat grinder into a separate bowl.
STEP 18

Finely chop the onion.
STEP 19

Melt butter in a frying pan.
STEP 20

Fry the onion.
STEP 21

Add ground liver.
STEP 22

Fry, stirring.
STEP 23

To the almost finished liver with onions, add other ready-to-eat (pies) offal.
STEP 24

Add 100 ml of heart and lung broth.
STEP 25

Season to taste.
STEP 26

The filling and dough are ready.
STEP 27

Form base balls for the pies.
STEP 28

Like this.
STEP 29

Roll out circles. Add a spoonful of filling.
STEP 30

And close the pie.
STEP 31

And so with everyone.
STEP 32

Fry in oil on both sides.
STEP 33

The pies turn out fluffy and very tasty.
STEP 34

And also filling.
STEP 35

You can also take them with you on the road, to work, on a picnic... And treating your neighbors is a nice thing!
