Fresh cabbage soup with chicken
Step-by-step preparation
STEP 1
How to cook cabbage soup from fresh cabbage with chicken? First of all, prepare all the products according to the list. Take the whole chicken or any parts from it. Chicken backs, legs, wings, etc. are good for broth.
STEP 2
Place the chicken in a saucepan, add water and place on the stove. Bring to a boil over high heat, add salt and skim off any white foam that has formed. Reduce the flame to moderate and cook the meat until cooked. This will take up to 30-40 minutes.
STEP 3
Meanwhile, prepare all other products. Remove the outer tough leaves from the cabbage. Peel potatoes, garlic (if you use it), onions and carrots. Rinse all vegetables and herbs in cold water.
STEP 4
Finely chop the onion and grate the carrots using a coarse grater.
STEP 5
Chop the tomatoes into small cubes. If desired, peel the tomatoes first. I don't usually do this.
STEP 6
Heat a small amount of refined oil in a frying pan. Send the onions and carrots to fry. Saute the vegetables, stirring, until the onion is translucent.
STEP 7
Add tomatoes to fry and stir. Reduce heat to medium and cook everything together for about 7-10 minutes.
STEP 8
Cut the potatoes into medium-sized cubes or sticks.
STEP 9
Chop the cabbage into medium-sized strips; you should not cut it too thin so that during subsequent simmering the cabbage retains its shape.
STEP 10
Remove the chicken from the broth. Place the potatoes into the pan. Cook until done (about 20 minutes).
STEP 11
Increase the heat on the stove. Add the cabbage, bay leaf and roast to the broth. Add salt as needed and add sugar.
STEP 12
Separate the slightly cooled chicken meat from the bone and place in a saucepan. After boiling again, turn the burner down to the lowest setting (if you have an electric stove, set it to one), cover the pan with a lid and simmer the cabbage soup for about an hour. If you did not use a young head of cabbage, then leave it on the stove for up to an hour and a half.
STEP 13
Sprinkle the finished cabbage soup with fresh, finely chopped herbs and add garlic. Remove from heat and let sit for 5-10 minutes.
STEP 14
The most aromatic and delicious cabbage soup from fresh cabbage is ready! Serve hot, sprinkled with ground black pepper.
STEP 15
