French buns

Incomparably delicious, airy, tender, melt in your mouth! The French buns in this recipe are similar to the famous brioche buns, but they are much faster and easier to prepare. They are formed immediately after kneading the dough and only then left to proof. The buns turn out incredibly tender and airy!

Step-by-step preparation

Cooking timeCooking time: 1 hr 30 mins
  1. STEP 1

    STEP 1

How to make French buns? Prepare your food. You may need more or less flour than the amount specified in the recipe. I prepared half a portion.

  2. STEP 2

    STEP 2

How to make bun dough? Heat the milk on the stove or in the microwave until warm. A comfortable temperature for activating yeast is about 40°C, do not overheat. Pour the milk into a bowl. Add the egg, melted butter, sugar and salt. How to melt butter? Read about it at the end of the recipe.

  3. STEP 3

    STEP 3

Start adding flour in portions, sifting it through a sieve. Do not add all the flour at once; you will add gradually while kneading, calculating the amount according to the condition of the dough. I first put in half of all the flour.

  4. STEP 4

    STEP 4

    Sprinkle yeast on top.

  5. STEP 5

    STEP 5

Start kneading the dough. The most convenient way to do this is with a mixer with bread attachments. But you can knead with your hands, just be prepared for a long kneading. Add the remaining flour in two tablespoonfuls. When the dough becomes stiff enough and begins to pull away from the sides, stop.

  6. STEP 6

    STEP 6

The finished dough is pliable, not sticky at all and very soft. Collect it into a ball.

  7. STEP 7

    STEP 7

Prepare the ingredients for the filling. Remove the butter from the refrigerator in advance; it should soften completely.

  8. STEP 8

    STEP 8

How to make bun filling? Place butter, sugar and starch in a bowl. Mash the ingredients with a fork until smooth.

  9. STEP 9

    STEP 9

Place the dough on a floured work surface. Roll it out into a rectangle about 5mm thick.

  10. STEP 10

    STEP 10

Spread the filling evenly over the dough.

  11. STEP 11

    STEP 11

Roll the dough along the long side.

  12. STEP 12

    STEP 12

Cut it into equal pieces with a knife. I got 12 buns from half the portion of ingredients.

  13. STEP 13

    STEP 13

Take a baking sheet, grease it with oil or line it with parchment paper. Arrange the buns, leaving space between them - they will grow during proofing and baking. Cover the baking sheet with the rolls with a towel and leave at room temperature for one hour.

  14. STEP 14

    STEP 14

After an hour, the buns will increase in size.

  15. STEP 15

    STEP 15

Preheat the oven to 220°C, top-bottom mode. Then reduce the temperature to 180°. Place the baking sheet with the buns in the oven. Bake them for about 15-20 minutes until golden brown. Determine the exact baking time and temperature based on your oven. The oil from the filling will leak out a little, this is not a big deal. Remove the finished buns from the paper.

  16. STEP 16

    STEP 16

Serve the buns with your morning coffee or tea. They are delicious both warm and cold.

The French buns turned out really airy, tender and very tasty, despite the fact that I use only 1st grade flour, because... it contains vitamins and microelements, and premium flour contains only carbohydrates, although the latter is recommended for buns. The dough is very nice and soft and easy to work with. I took the ingredients in full, everything according to the recipe, and with difficulty placed the buns on a baking sheet, and after proofing they all came together. You still need to bake at half capacity. The amount of spread (butter, sugar and starch) can also be safely reduced by half, because A lot of oil leaked out and it was very sweet for my taste. But in general, I was pleased with the result. Thank you very much for the recipe.

When I made French buns for the first time a couple of years ago, they didn’t turn out well. the recipe was different, and apparently I changed the flour. They were not as airy as in the recipe. I finally decided to try making French buns according to your recipe. oh, miracle! I succeeded! The buns are not only fluffy, but also very tasty. True, my molds are slightly different, I got 12 pieces. thanks for the recipe.

The buns are very airy and rich. The recipe is easier to follow than others, but it was also a disastrous cooking experience. But since I am a lover of filled buns, I decided to seal each bun with dried apricots and a piece of jam apple, it turned out very tasty. It’s better, of course, to add jam, because the buns themselves are a little dry, and you can pour glaze on top. Thanks for the base recipe.

French buns are simply a miracle: soft, airy, just melt in your mouth.... and if you absolutely love baking, then just after a couple of visits to the kitchen, these buns are no longer there...)) Of course, as with any baked goods, there is a lot of fuss , therefore, I know that 10 buns are not enough in my case, I immediately made 2 times more... I’m fussing, I’m fussing...
