Eggplants in Tatar style

Step-by-step preparation
STEP 1
To prepare Tatar-style eggplants for the winter, take the following set of products: blue eggplants, tomatoes, sweet peppers, hot capsicums, garlic, odorless sunflower oil, salt, sugar, vinegar.
STEP 2
Wash all the vegetables thoroughly beforehand and remove the seeds from the sweet pepper and the garlic from the outer scales. Cut the drained eggplants into cubes or medium-sized slices; varieties that contain solanine must first be covered with salt and left for a while, then rinsed with water and squeezed. Those varieties that are now on sale no longer require such processing.
STEP 3
Cut the bell pepper into slices or strips. The brighter the pepper fruits, the more colorful the entire appetizer will be.
STEP 4
Chop the tomatoes coarsely and grind them in a food processor, blender or meat grinder - it doesn’t matter. Pieces can be left so that the texture of the tomato can be read in the total mass. This is optional.
STEP 5
It is convenient to make such preparations in a cauldron if you are making a large volume of snacks at once. Pour the tomato mixture into the bottom of the cauldron.
STEP 6
Add salt to it.
STEP 7
Add sugar and sunflower oil, stir the mixture and bring to a boil.
STEP 8
Immerse the prepared vegetables in this resulting sauce, first the eggplants,
STEP 9
then sweet pepper. Stir and cook over medium heat for 25-30 minutes.
STEP 10
Prepare a spicy dressing: chop the hot pepper, if desired, with seeds or removing them, you can take either fresh or dried pepper, just remember that it is more concentrated, try it when adding. The salad should be spicy, but as spicy as you like. Chop the garlic and adjust the amount to your taste. Add garlic and hot pepper to the boiling mixture.
STEP 11
Boil for another 10 minutes, add vinegar. You can decide with vinegar in your own way: I don’t always put it in tomato salads, because the acid is already present and it is enough to ensure a good sterilization or pasteurization process for the product so that it can be stored for a long time. Vinegar simply makes this process more reliable, but the product turns out to be much more harmful.
