STEP 1
How to make eggplants with pepper and garlic for the winter? Prepare the ingredients according to the list. The amount of vegetables can be changed proportionally, increased or decreased, the amount of spices and seasonings can also be changed to taste, and the preparation can be made less or more spicy. Wash the vegetables thoroughly. Cut the eggplants into cubes. Place them in a bowl, sprinkle with salt, stir and leave for half an hour.
STEP 2
Cut the bell pepper into two parts, remove the stem and seed capsule. Cut the bell pepper pulp into small cubes or strips. You can use vegetables of different colors to make the appetizer bright and colorful and interesting to serve.
STEP 3
Pour vegetable oil into a frying pan and heat it. Fry the eggplants on it, stirring occasionally with a spatula, for 15 minutes.
STEP 4
For such preparation, it is not necessary to take small, marketable tomatoes that are suitable for canning in their entirety. Large, overripe fruits are suitable, the main thing is that the vegetables are not spoiled or rotten. Pour boiling water over the tomatoes, remove the skin, cut out the place where the stalk attaches, cut the pulp into pieces and puree it with a blender or pass through a meat grinder.
STEP 5
Place the eggplants in an enamel pan. Add cooked bell peppers and tomato puree to them. Place on the fire and simmer the vegetables over low heat, stirring constantly, for about 15 minutes. The vegetables should release their juice and it is important to ensure that they do not burn to the bottom of the pan.
STEP 6
For a spicy kick, add finely chopped garlic and hot pepper; the amount of these spices can be reduced to taste. Add salt and sugar. Cook over low heat for another 5-7 minutes. Pour in table vinegar, let the vegetable mixture boil and turn off the heat.
STEP 7
Place the vegetable salad in pre-washed and sterilized jars. Immediately roll up the lids of the jars and let them cool under a blanket upside down. The preparations for the winter are ready. Bon appetit!
