    How to make early cabbage for the winter in jars? Prepare the ingredients for the preparation. Clean the white cabbage from the top dry and dirty leaves. Cut the head of cabbage into two parts and remove the stalk. Finely chop the cabbage with a knife or using a food processor if the preparation is being prepared in large quantities.

    Wash and peel the carrots; if the carrots are young, just from the garden, their skin is thin and tender, you don’t need to peel it, just rinse the vegetable with a sponge. Grate the carrots or put them through a food processor.

    Place the cooked vegetables in a large container; it is convenient to take a bowl or basin for this. Add (if you have) dill seed, it will make the preparation especially fragrant. Stir and mash the vegetables with clean hands.

    Prepare the jars in advance. Wash the cans of soda in running water and sterilize using one of the convenient methods. I like to sterilize jars in the oven; I get a lot of sterile glassware at once. Place the wet jars, neck down, on a rack in a cold oven, turn the oven on to 150 degrees. It is enough to keep 1 liter jars in the oven after reaching this temperature for 15 minutes. Wash the lids, boil and dry.

    Place the cabbage and carrots in the jars, compact them tightly to the shoulders of the jars. Boil water and pour it over the cabbage so that the water completely covers the contents of the jars. Cover the jars with sterile lids and leave for 15 minutes. Drain the water from the jars with cabbage into a saucepan. Boil again and repeat the procedure of pouring the cabbage into the jars for 15 minutes.

    Again, pour the water from the cans into the pan. Place on the fire, add sugar and salt, bay leaf, peppercorns, stir until the sugar and salt are completely dissolved. When the marinade boils, pour in the vinegar and turn off the heat.

    Pour the prepared marinade over the cabbage. Immediately close and seal the jars with lids. Leave at room temperature until completely cooled. In winter, pickled cabbage is simply a miracle. I decided to make a cabbage preparation and found this recipe. Everything is described extremely simply and clearly, so preparation was not difficult. I chopped fresh young cabbage and coarsely grated the carrots. I mixed the vegetables in a deep bowl as recommended by the author. Unfortunately, I didn’t have dill seeds on hand, so I did without them. Combined all the ingredients for the marinade and brought to a boil. I placed bay leaves in the bottom of sterile jars, then cabbage and carrots and poured hot marinade over them. I rolled up the jars, leaving a little for testing. The cabbage came out aromatic, crispy, appetizing, simply delicious! Early cabbage in jars for the winter is an excellent preparation. Simple, fast, no fuss and very tasty. It can be served as a salad or snack. Using this recipe I got four half liter jars. The blank itself looks beautiful on a shelf in the basement) Many thanks to the author!
