    How to make dumplings with pork and chicken? Prepare the necessary ingredients. Take the pork pulp; from the chicken, fillet of any part of it. It is better if the meat is chilled, then the filling will be juicier. If you have it frozen, then defrost it in advance by transferring it from the freezer to the bottom shelf of the refrigerator. Wash and dry the meat well, then cut into pieces.

    Prepare minced meat for filling. How to make minced meat? First, pass the chicken fillet through a meat grinder with a fine grid. I took the breast, although you can take any part of it, the main thing is that it is without bones and cartilage. I also remove the skin because it is oily, but you can leave it on if you like.

    Next, scroll through the pork. It is better to take pork that is not very fatty and preferably without veins, so as not to break the meat grinder.

    Skip the onions after the pork and add to the minced pork and chicken. Onions, if you like, you can take more, but for me this is the best option. And instead of regular onions, you can take red or white onions.

    Pour 50 milliliters of water into a bowl with minced meat, add salt and pepper. Then mix it well. If you feel that the minced meat is very dense, add a little more water, otherwise it will not be juicy in the finished dumplings. Place the bowl of minced meat in the refrigerator for 30 minutes.

    Meanwhile, prepare the dough. How to make the dough? Pour water into a bowl, preferably lukewarm, add egg and salt. Stir until smooth and salt dissolved.

    Sift the flour into a bowl with the egg mixture, about two-thirds of the total mixture, pour in the vegetable oil and mix.

    Add flour and knead the dough. It will be a little tight, but that's normal. Wrap the dough in plastic and leave it alone on the counter for 25 minutes. During this time, the dough will “rest” and become soft and elastic.

    Sprinkle the surface of the table with flour. Cut a piece of dough and roll it into a ball. Roll it into a thin layer, cut out circles. This can be done with any round mold. In the absence of one, I made it using an ordinary glass. The larger the diameter of the circle, the larger the finished dumplings will be.

In general, I’m not a fan of making dumplings, but my daughter really wanted to learn how to make them). For “learning,” I chose a recipe for dumplings with pork and chicken. For the filling I used chicken breast and pork with fat to make it juicier. I twisted the meat with the onion and salted it. My daughter kneaded the dough with a fork, and then I finally kneaded it until it was smooth. As the author advises, I wrapped the dough in a bag and left it on the table for half an hour. After this, it became more elastic and pliable. My daughter quite easily rolled it into a thin layer and cut out circles with a glass. The dumplings are also easy to make, the dough is not dry, but does not tear. Everything turned out great for us! The process is interesting and the result is successful. The dumplings are delicious, not a single one fell apart! I recommend!
