    How to make blueberry dumplings with kefir? Prepare your food. The fat content of kefir does not matter. You may need a different amount of flour, check the dough and its consistency. The berries are suitable both fresh and frozen. If you use frozen ones, do not defrost them first. Sort the berries, wash and dry them, pouring them onto a paper towel. Adjust the amount of sugar in the filling to your taste.

    Heat the kefir until warm, I did this in a saucepan on the stove, over low heat. Just be careful - overheated kefir can curdle. Pour sugar, salt and soda into it, stir. Since kefir is warm, the products will dissolve in it much faster.

    A reaction will immediately begin between the acid contained in kefir and the alkali, which is soda. Thanks to this, carbon dioxide will be released, you will see it immediately - the mass will begin to bubble. As a result, the dough will be fluffier and softer. Let the kefir sit for 5 minutes, then pour it into a mixing bowl. Beat in the egg and mix with a whisk.

    Start adding flour to the kefir mass in portions, being sure to sift it. This will not only remove debris, but also enrich the flour with air, which will improve the dough. After each portion of flour, stir the dough, first with a whisk, then with your hands.

    When the dough becomes thick, transfer it to the table and knead on it. Decide whether to add more flour based on the consistency of the dough - if it is very sticky, add more, if you can already knead it calmly, then stop.

    As a result, the dough should become smooth and homogeneous. Collect it into a ball, cover with a towel and leave to lie for 30 minutes. During this time, the flour will finally absorb all the liquid, gluten will develop in it, which is responsible for elasticity - such dough is much easier to work with, so I advise you to always let it rest after kneading.

    Then divide the dough into three parts to make it easier to roll out. On a table dusted with flour, roll out the dough into a layer, but not very thin, leave it slightly puffy, 4-5 mm, so that the dough does not tear during cooking.

    Cut the dough into circles using a glass or a special recess. Do not make the preparations small so that they can accommodate more berries.

    Place a teaspoon of blueberries on a circle of dough and sprinkle a teaspoon of sugar on top. With this amount, the dumplings are not too sweet; I also sprinkled sugar on top when eating them.

    If desired, twist the seam of the dumplings in a figurative manner - this will not only decorate them, but will also additionally protect them from juice leakage.

    How to cook dumplings? Bring water to a boil in a large saucepan - the dumplings should float freely when cooking so as not to stick together. For the same reason, I advise you to cook them in batches. Salt the water a little. Throw in the dumplings. Stir with a spoon to prevent the dumplings from sticking to the bottom. Wait for it to boil again, turn the heat to moderate. Once the dumplings float, cook them for 3 to 5 minutes, depending on the size.
