STEP 1

Prepare all the indicated products.
STEP 2

First of all, prepare the fish. Rinse it with running cold water. Pat with a paper towel to remove excess moisture. If the sprat is large, you can remove the head and entrails. Small fish do not need to be cleaned.
STEP 3

Choose convenient containers for pickling. Move the prepared sprat. Add salt. Stir until all the carcasses are coated with salt. Leave on the kitchen counter for 5-6 hours. If the fish is small, this time will be enough. When using large sprat, the salting time should be increased to 7-9 hours. Stir occasionally.
STEP 4

Prepare the spicy marinating mixture. Add vegetable oil, curry, ground paprika, and turmeric to a deep bowl. Stir. You should get a thick mass, similar to a sauce. The composition of spices and their quantity can be adjusted to your taste. Paprika and turmeric will give a beautiful yellow-orange hue.
STEP 5

When the salting time is up, taste the sprat. If everything is satisfactory, transfer to a colander and rinse well to remove salt. Wipe off excess liquid with napkins. Place in a deep bowl. Add the spice mixture. Stir. Place in the refrigerator for 1-2 hours.
STEP 6

Place the fish in one layer. In this case, there were 3 pallets. Turn on the electric dryer to the minimum temperature (40-50 degrees). Dry until desired result. After an hour, swap the trays, as the bottom tray dries faster than the top one. In this case, it took 2 hours to dry the sprat at a power of 520 watts.
STEP 7

The dried sprat in the electric dryer is ready. Store in the refrigerator in a tightly sealed container.
