    Grate the carrots (finely/coarsely as usual for you).

    Chop the pepper into strips.

    Combine all the vegetables in a deep bowl and mix. Simmer for 20 minutes on low heat. Then add sugar. Add salt. Add oil. Keep on fire for another 5 minutes, stirring constantly.

    Pour in 9% vinegar, mix thoroughly and simmer for another 5 minutes.

    Place the hot mixture into sterile jars.
