Double shortbread cookies with jam

STEP 1

All products for convenient preparation of cookies are taken at room temperature.
STEP 2

Place very soft butter in a bowl.
STEP 3

Add 150 g to the oil. powdered sugar and mix with a spatula.
STEP 4

Beat with a mixer into a fluffy mass.
STEP 5

Add a chicken egg.
STEP 6

Add two yolks, separating the white.
STEP 7

Beat thoroughly until smooth, 3-4 minutes. Sift 150 gr. flour, add a pinch of salt to the dough.
STEP 8

Add a little more than 0.5 teaspoon. baking powder and 1 teaspoon. vanilla sugar and mix well.
STEP 9

Sift the remaining flour and mix again with a spatula.
STEP 10

If the dough turns out a little sticky, add a little flour to it until elastic and knead with your hands.
STEP 11

Sprinkle the silicone mat with 0.5 tbsp flour. and put the dough on it. Knead the dough, knead it and divide it into two parts.
STEP 12

We form a flat cake from the first part of the dough.
STEP 13

Roll out the dough into a thin 3 mm. plast.
STEP 14

Take a cookie cutter and make flower-shaped cookie dough.
STEP 15

Place the pieces on a baking sheet lined with parchment.
STEP 16

Roll out the second part of the dough into a thin layer and make blanks with holes equal in number to the resulting flowers. Place our cookies in an oven preheated to 180 degrees for 10 minutes.
STEP 17

We take the cookies out of the oven and start decorating with apricot jam.
STEP 18

Decorate with boiled condensed milk.
STEP 19
