STEP 1

Prepare the ingredients. To prepare dietary zucchini soup we will need: drinking water or pre-cooked vegetable broth (from onions and carrots with the addition of celery), zucchini, potatoes, herbs, onions, garlic, olive oil, ground black pepper and salt.
STEP 2

Wash the zucchini, cut off the vegetable and cut into several circles. They will be needed to decorate the finished dish.

Cut the rest of the zucchini into semicircles.

Peel the onion and cut into half rings.

Peel and chop the garlic.

Wash the potatoes, peel and cut into cubes.

Add zucchini cut into semicircles to the pan with the onions. Fry together, stirring occasionally, for about 5 minutes.

Add potatoes, stir. Fry for another 2 minutes.

Pour hot vegetable broth or water into the vegetables. Salt and pepper. Mix.

Cook the soup, covered, over low heat for about 15 minutes until the vegetables are soft.

Add salt to the reserved zucchini slices and fry in a frying pan in vegetable oil until a light golden crust appears. If desired, you can sprinkle the zucchini with ground herbs and salt.
STEP 13

Using an immersion blender, puree the vegetables.
STEP 14

Pour hot soup into bowls. Place 2-3 mugs of zucchini on each plate. Bon appetit!
