Delicious mashed potato puree

I offer you a recipe for tender, tasty mashed potatoes, the preparation method of which differs from the classic one. We call it tolchenka.

Cut the peeled potatoes into small cubes.
STEP 3
Place the potatoes in the pan.
STEP 4
Fill with cold water, add salt, bay leaf and put the pan on the fire. Cook until the potatoes become soft.
STEP 5
Then drain half of the broth, leaving the other half in the pan.
STEP 6
Immediately begin to thoroughly mash the potatoes until smooth. If necessary, add hot potato broth.
STEP 7
Add vegetable oil and egg.
STEP 8
Serve hot mashed potatoes as a side dish.

Why don't they add it? Sometimes there are potatoes with fried onions, even with cracklings - that is, they add different types of oil. but it seems to me that only butter and milk make potatoes fluffy and tender. and vegetable liquefies it a little, if I made it clear, but it won’t make the potatoes tender.

and the egg - it also holds the potatoes together. I used to do this, but then I gave up in favor of milk and butter. but this recipe is often made in Western Ukraine
