Cottage cheese is suitable for any fat content. It is better that it is pasty, smooth, and not too wet. Rub the grainy cottage cheese through a sieve or beat in a blender until it has a homogeneous consistency without lumps.

    Sift the flour into a suitable container. This is necessary in order to enrich it with oxygen, then the baked goods will be fluffy and airy.

    Beat the eggs into a deep, dry container, making sure to wash them first and wipe them dry with paper towels. Add a pinch of salt and beat with a mixer until fluffy.

It should be a little thicker than on pancakes.

    Silicone molds do not need to be greased with anything beforehand, since the dough already contains oil and the baked goods will not stick to the silicone. Fill the molds to 2/3 of the height (about 1 tablespoon) with dough. Bake in an oven preheated to 180°C for about 30 minutes (I have an electric oven with top-bottom mode). Focus on your oven.

    How to determine the readiness of muffins? Focus on the color of the baked goods. When the muffins are browned, pierce them with a wooden skewer or toothpick. If it comes out dry, without any sticky dough, it's ready. Remove baked goods from the oven. Cool slightly and remove from the molds while still warm. You can decorate the muffins with powdered sugar, fresh berries, and fresh mint leaves.

I was looking for a recipe for cottage cheese baking on the website; I needed to use the leftover cottage cheese. And I found this wonderful muffin recipe. They are simply perfect! The dough is fluffy, porous, incredibly soft. Delicious crispy crust on top. The quantity of products was precisely measured, it turned out to be exactly 10 pieces. It’s not enough for our family, of course, the muffins were literally divided into pieces) Next time I’ll increase the portion two or three times.
