  1. STEP 1

    STEP 1

How to prepare cucumbers in tomato juice for the winter? Prepare the necessary ingredients. Choose pickling, prickly varieties of cucumbers. They must be strong and dense. Tomato juice is suitable for both store-bought and home-made. I have a purchased one. Take 9% vinegar.

  2. STEP 2

    STEP 2

Wash the cucumbers under running water and cut off the ends on both sides. Then there are two ways: either cut the cucumbers into pieces, or leave them whole. I choose the first option because I have a small jar and more chopped cucumbers will fit in it, and they will marinate much faster.

  3. STEP 3

    STEP 3

Place the cucumbers quite tightly in a clean jar along with the bay leaf, sweet peas and peeled and sliced garlic. Traditionally, cans for preservation are washed with baking soda. We will sterilize the jar later, now there is no need for it.

  4. STEP 4

    STEP 4

Fill the jar with boiling water up to the neck. Boiling water should be poured into the center, onto the cucumbers, and not directly onto the glass, otherwise it may burst. Leave the jar for 15 minutes, covering with a clean lid. After this, drain the water from the jar; it will no longer be needed. Make sure the spices remain in the jar.

  5. STEP 5

    STEP 5

Prepare the marinade. To do this, pour the tomato juice into a small saucepan and bring it to a boil over medium heat. Add salt, sugar and hot ground pepper.

  6. STEP 6

    STEP 6

As soon as the sugar has dissolved, remove the marinade from the heat and pour in the vinegar. Stir.

  7. STEP 7

    STEP 7

Fill the jar up to the neck with marinade. A little marinade may remain - this is a reserve for gravy after sterilization.

  8. STEP 8

    STEP 8

Next comes the sterilization process. Take a deep saucepan. Place a disposable cloth napkin or a small waffle towel on the bottom. Place a jar covered with a lid (not closed) on it. Pour cold water into the pan up to the level of the neck of the jar. Place over medium heat and bring to a boil.

  9. STEP 9

    STEP 9

Sterilize the jar within ten minutes after the water boils. The tomato juice in the jar will also boil, which is why the lid should not be screwed on at this stage. In the best case, it will simply be torn off by steam, and you will have to wash the entire kitchen: from floor to ceiling.

  10. STEP 10

    STEP 10

Carefully remove the jar with an oven mitt to avoid getting burned. Check the marinade level. If it is still up to the neck and nothing has spilled out, screw the lid tightly on or roll it up with a key if you have a sealable jar. If you need to add marinade, you must first bring it to a boil. Turn the jar over and wrap it in a towel. After complete cooling, the cucumbers can be stored. Happy harvesting!
