Take good quality water, bottled or filtered, so that the dish does not have any foreign aftertaste.

    Take a bowl and sift the flour into it. Pour sugar, salt and baking powder into it. Stir the flour and additives until they are evenly distributed. Pour a spoonful of vodka into the water - during frying, the alcohol will evaporate, making the dough more airy. Add water to the flour little by little, kneading the dough with a fork. Now look at how it turns out. Too liquid - add more flour. If it's too dry, add more water.

    Start kneading the dough with your hands. Knead for a long time, about 10 minutes, it should become homogeneous and smooth. Gather the dough into a ball and put it in a bag. Leave it to sit on the table for 15 minutes. During this time, the flour will absorb the remaining liquid, gluten will develop well and the dough will become more elastic and easy to work with.

    Roll out the dough on a floured surface into a very thin layer. The thinner it is, the crispier the brushwood will be.

    Cut the layer into small rectangles, making a cut in the center of each. It is convenient to do this with a pizza cutter.

    Place a pan suitable for deep frying over high heat. I choose ones with high sides and not a wide bottom - this way less oil is used. Pour frying oil into it. Heat it over high heat. There is a simple way to check whether the oil has warmed up well enough. Dip a wooden stick into it. If bubbles have gathered around it, then you can begin the frying process. Place several pieces in the oil.

    Don't put too much, they should float freely, otherwise the brush may clump or stick to the bottom. Fry the brushwood, turning it occasionally with a fork so that it browns evenly on all sides. Make the heat medium.

    Remove the finished brushwood with a slotted spoon onto a plate lined with a paper towel - it will absorb excess fat. Immediately add the next portion. Fry the brushwood from the entire dough in this way.
