  1. STEP 1

    STEP 1

    Ingredients.

  2. STEP 2

    STEP 2

Prepare the dough. Pour mineral water into the flour, then cognac, add sugar and salt. Mix everything.

  3. STEP 3

    STEP 3

Sprinkle the table with flour. Knead the dough well, it should turn out elastic and tough. You may need more or less flour. Therefore, do not pour it all out at once, then add as needed.

  4. STEP 4

    STEP 4

Cover the dough with a towel and leave for 15 minutes.

  5. STEP 5

    STEP 5

For ease of rolling out, divide the dough into 4 parts.

  6. STEP 6

    STEP 6

Sprinkle the table with flour. Roll out 1 piece of dough as thin as possible.

  7. STEP 7

    STEP 7

Sprinkle the dough layer with flour and spread it over the entire surface. This is necessary so that the layers do not stick together when rolling.

  8. STEP 8

    STEP 8

Now you need to roll the rolled out layer into a not very tight roll 3-4 cm wide.

  9. STEP 9

    STEP 9

Then, using a curly or regular knife, cut the roll diagonally into pieces 2 cm wide.

  10. STEP 10

    STEP 10

The resulting pieces need to be straightened in the shape of a flower so that there is a hole in the middle. We also roll out and shape the remaining dough.

  11. STEP 11

    STEP 11

Pour vegetable oil into a frying pan or saucepan and heat it. Place the flowers and fry on both sides until golden brown.

  12. STEP 12

    STEP 12

Place the finished Crimean brushwood on napkins or a towel to remove excess oil. Leave to cool.

  13. STEP 13

    STEP 13

Cook the syrup. Mix water with sugar and place on medium heat, stirring constantly, until the sugar is completely dissolved.

  14. STEP 14

    STEP 14

Cook for 5 minutes, turn off the stove and add honey, also stirring until it is completely dissolved.

  15. STEP 15

    STEP 15

Dip the cooled brushwood into syrup and place on a plate.

  16. STEP 16

    STEP 16

Sprinkle with chopped walnuts; if you like, you can sprinkle with powdered sugar.

  17. STEP 17

    STEP 17

Crimean brushwood or “beach” baklava is ready. Bon appetit!

Once you try this sweetness, you will fall in love once and for all. Tested from personal experience 🙂 The truth was always sure that the preparation was especially difficult, but then I came across this recipe. And as they say: “He who risks nothing, gains nothing.” The family liked the honey deliciousness so much that they took it apart before our eyes 😁 The baklava turned out so tasty that after eating one... you involuntarily reach for another. Pleasant delicate sweetness, crispy structure, unusual shape and of course a super delicious aroma... just beckons. And don’t expect to be able to stop if there’s a whole plate of them in front of you. When cooking, pluck up the courage to make small changes. I decided not to add cognac, without replacing it with anything. I didn’t have a figurative knife, so I used a regular one. I also modified the cutting of the shape. I reduced the width of the roll itself, but cut the pieces themselves wider. I crushed the nuts into powder. I’m happy with the recipe👍👍👍 Thank you very much to the AUTHOR!!!!

Tatyana, thank you. Try to cook it, it turns out very crispy brushwood, while you were eating it, you got tired of crunching it.

Did not work out! Either the dough should have been kneaded more tightly, or it should have been rolled out thicker. Exhausted is not the right word. It took me three hours to unstick the pieces of the roll, although I sprinkled it well with flour when rolling it. After frying, the resulting something did not crunch at all, but turned out to be simply hard. I got tired of fiddling around and used the last portion of dough for “brushwood”. It’s also not great, but the process is simpler and faster. A recipe to which you need to adapt, so to speak - “get your hands on it.” There are recipes that are labor-intensive and require a lot of time to prepare, but the result justifies any expense. This one is not one of those. I love baklava very much. I'm using a different recipe. This one caught my attention with a wonderful photo. But for some reason there is no desire to correct my mistakes and achieve the same result. "The preparation process was too long and painful." Vera, your recipes are all wonderful. I have cooked using them many times and continue to cook them. I probably did something wrong.
