STEP 1
How to make cranberries for the winter with sugar without cooking? Prepare the necessary ingredients. The easiest way to prepare cranberries for the winter while preserving all the vitamins contained in fresh berries is to puree them with sugar without cooking. All you need is cranberries and sugar. Carefully sort the cranberries, remove rotten berries to avoid fermentation and spoilage of the finished product.
STEP 2
Rinse the berries under running water, place in a colander and let the water drain well. You can puree the cranberries with a blender - this is the easiest and fastest way. You can also grind it through a sieve, then the mass will be homogeneous and jelly-like, without skin and seeds. However, they also contain useful substances, therefore, I believe that it is better not to separate the cake from the pulp. You can also use a meat grinder, food processor, or other kitchen appliance.
STEP 3
However, it is believed that the acids in cranberry juice may react with the metal parts of these devices. Therefore, it is better to grind the berries with a wooden masher or spoon, but be careful, bursting berries may splash. Choose the option that suits you. If some berries remain intact in the grated cranberries, there is nothing to worry about.
STEP 4
In the classic recipe for pureed cranberries, sugar and berries are added in equal parts. This amount of sugar allows you to store the finished product at room temperature. If, due to personal preferences, this amount of sugar seems excessive to someone, it can be reduced. Then the cranberries will not be stored for so long, and this will need to be done in a cold place, in the refrigerator or, even better, in the freezer.
STEP 5
Add sugar to the pureed cranberries and stir. Cover the bowl with the contents with a cotton towel and leave overnight at room temperature. Sterilize the jars in the morning. To do this, wash them in running water and soda. Place the still wet jars upside down in a cold oven. Heat it to 150 °C and, after reaching this temperature, sterilize 0.5 liter jars for 10 minutes. Wash the lids, boil and dry.
STEP 6
Place the mixture in prepared jars. Roll up the lids and store in a cool place. Bon appetit!
