STEP 1
How to make couscous with vegetables? Peel the onions and finely chop them. Wash the carrots under running water, rubbing the skins with a brush to remove heavy dirt. The carrots need to be chopped quite finely with a knife so that they have time to cook. Instead, carrots can be grated on a coarse grater. STEP 2
Heat a non-stick frying pan with low sides over high heat. Pour in sunflower oil and heat it thoroughly. Reduce heat to medium. Add carrots and onions to fry until soft. This will take about five minutes. Stir the vegetables periodically to prevent them from burning. Read about the intricacies of choosing a frying pan and oil in the articles below the steps.
STEP 3
Wash the bell pepper and remove the seeds and stems. You can use bell peppers of any color; this will only change the appearance of the dish. Cut the pepper into medium pieces and add to the pan. Sauté the vegetables for a few minutes until the peppers soften a little.
STEP 4
Wash the zucchini and cut into medium cubes, add to the pan with the rest of the vegetables and stir.
STEP 5
The last vegetable ingredient is cherry tomatoes. They also need to be washed and cut, for example, in half lengthwise. You can grind it even more. Add tomatoes to the pan.
STEP 6
Salt and pepper the vegetables to taste. At this point you can add dried or fresh herbs and any other seasonings you like. I use a mixture of herbs: basil, oregano and mint.
STEP 7
Stir the vegetables and smooth them with a spatula. Sprinkle couscous evenly on top.
STEP 8
Pour filtered water over the couscous and, covering with a lid, simmer the dish over low heat until the moisture has completely evaporated. This will happen quite quickly, but it’s different for everyone due to the characteristics of the hobs and the pans themselves. I simmered for four minutes. Couscous cooks very quickly, and even this short time was enough for it to swell and become ready.
STEP 9
Stir the finished dish again and you can serve.
