It is with these ingredients that Easter will turn out tastier. Choose high-quality and natural cottage cheese, sour cream and butter - the result will depend on their quality. Remove all food from the refrigerator in advance so that it becomes warm and the butter is soft.

    Place cottage cheese, sour cream, soft butter and cornstarch in a deep bowl. Beat it all with an immersion blender. The mass should become completely homogeneous and smooth. This is one of the main secrets of a delicious Easter. If you don't have a blender, then rub the cottage cheese through a sieve.

    Beat the eggs into another bowl. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Start beating them at low mixer speeds. Add sugar in portions, beating well after each addition. Also add vanillin and salt, which will balance and enhance the taste. Beat eggs with sugar until fluffy and light.

    Combine the curd and egg masses. To keep them airy, stir with gentle movements from bottom to top. Add the beaten eggs in portions, kneading after each. The finished mass for Easter should be smooth and completely homogeneous.

    Prepare a baking dish. For a given quantity of products, it is better to take a mold with a small diameter, 16-18 cm. I have a sliding ring, 17cm. Line the inside of the mold with parchment. And wrap the outside with several layers of foil - Easter will be baked in water. Pour the curd mixture into the prepared pan and smooth the top.

    Place the pan in a deep baking pan (I used a glass baking pan). Pour boiling water into it so that it reaches the middle of the mold.

    Preheat the oven to 160°C, top-bottom mode, no convection. Place the baking sheet in the oven and bake it for 1.5-2 hours. The exact time will depend on the features of your oven. The top should be browned and a skewer inserted into the center should come out clean. When this happens, turn off the oven and leave the Easter in it for 4 hours. Then remove the pan from the oven. Place the Easter pan in the refrigerator for at least 4 hours.

Soon the Orthodox will celebrate Easter. And I decided to try in advance an interesting recipe for cottage cheese Easter baked in the oven. To prepare, I took everything according to the list. Cottage cheese 9%, I couldn’t find a fattier one. The butter is rich and fresh; I took it out of the refrigerator in advance so that it becomes as soft as possible. Crystalline vanillin was replaced with vanilla sugar (in the total weight of sugar). Beat the eggs well with sugar and salt. Punch the curd mass with an immersion blender until it reaches a creamy, smooth consistency. I combined everything carefully with a whisk. Replaced raisins with candied fruits. I baked Easter in a ring with a diameter of 18 cm for about two hours. At the same time, the middle swayed slightly. And after settling in the oven, the curd mass became denser. We tried this wonderful treat in the morning, just as Easter had cooled down well. It cuts well and holds its shape. And it really looks like a cheesecake that I baked in a similar way.
