Cottage cheese casserole in a frying pan with lemon zest
Ingredients
Step-by-step preparation
STEP 1
Cottage cheese casserole can be prepared not only in the oven, but also simply on the stove in a frying pan under a lid. For 8 servings of this casserole, we need half a kilo of cottage cheese, 3 eggs, half a glass of sugar, 4 tablespoons of semolina, a teaspoon of lemon zest and vegetable oil to grease the pan. Place the cottage cheese in a container and knead it.
STEP 2
Next, break the eggs into another container and pour sugar into them.
STEP 3
Beat eggs with sugar for two minutes with a mixer.
STEP 4
Then, after 2 minutes, while beating, add semolina to the eggs.
STEP 5
Continue beating the egg mixture for another two minutes until fluffy.
STEP 6
Next, grate the lemon peel on a fine grater to get a teaspoon of zest.
STEP 7
Pour the lemon zest into the container with the cottage cheese.
STEP 8
Pour the beaten egg mixture with sugar and semolina into the cottage cheese.
STEP 9
Gently mix the cottage cheese and egg mixture.
STEP 10
Then mix the curd and egg mixture thoroughly with a mixer for another minute.
STEP 11
Grease the frying pan for cottage cheese casserole generously with vegetable oil.
STEP 12
Before putting the curd mass into the frying pan, put it on high heat, cover with a lid and heat for 30-40 seconds, and then reduce the heat to low.
STEP 13
Place the curd mixture for the casserole into a heated frying pan.
STEP 14
Level the surface of the future casserole.
STEP 15
Cover the frying pan with the curd mass and leave on low heat for 30 minutes.
STEP 16
During cooking in a covered frying pan, the curd casserole will rise in the center. If the lid is glass, it will be clearly visible.
STEP 17
The cottage cheese casserole in a frying pan will be ready in half an hour. Turn off the heat and lift the lid.
STEP 18
Let the casserole cool; during the cooling process, the raised mound in the middle of the casserole will settle and its surface will level out.
STEP 19
When the cottage cheese casserole has cooled, it needs to be transferred to a dish. It is most convenient to do this in parts. Cut the casserole in a frying pan and carefully transfer each piece to a dish using a spatula.
STEP 20
Serve cottage cheese casserole with sour cream.
