    How to make cookies with cucumber pickle? Prepare your food. The main condition when choosing a brine for these cookies is that it must be tasty; too sour or salty will not work. First strain the brine. It is better to take refined, odorless oil. Although our grandmothers baked with aromatic oil. It seems to me that the taste of the oil will compete with the aroma of the brine.

    Take a large bowl to knead the dough. Pour the brine into it, then add sugar. You can reduce the amount of sugar, then you will get a saltier version. Mix the brine with sugar with a whisk. Pour in the vegetable oil, add baking powder and stir again.

    Start adding the sifted flour in portions, kneading the dough after each addition. First stir with a whisk, then with a spoon. Add flour in parts, keeping in mind that it may take you more or less than mine.

    At the very end, when the dough becomes completely thick, knead it with your hands. The dough turns out to be very easy to work with, soft, non-sticky and flexible.

    Don't knead it for too long, as soon as the dough comes together into a ball, stop.

    Turn the dough out onto a floured work surface. Roll it out with a rolling pin into a layer about 5 mm thick. Try to roll out evenly so that both the edges and the middle are the same thickness. I didn’t take this into account; it affected me later when baking.

    Cut out cookies from the dough using special cutters.

    Shape the scraps again and roll them out. You can either cut out the cookies into shapes again, or, like me, cut them into diamonds. In this case there will be no cuttings. In principle, you can cut cookies right away, without molds.

    Place the cut out cookies on a baking tray lined with baking paper. I got two baking sheets - one with figures, the other with diamonds.

    Bake the cookies in the oven, preheated to 180°C, for about 15-20 minutes. They should turn golden. As you can see, my cookies browned unevenly. This happened precisely because some of them were thinner - such cookies came out darker. Be guided by your oven.

I love these simple cucumber pickle cookies, they are delicious and budget friendly. And it can be a pity to throw away a delicious brine) I had pickled tomato brine, I like the cookies on it better, it’s softer and sweeter. I reduced the amount of ingredients slightly so that the cookies fit on one large baking sheet. The dough turned out soft and very pleasant, it’s so easy to work with, even a child can handle it. My daughter helped me cut out the cookies. I rolled out the dough thicker, I had already made it thin, I wanted it thicker) After 20 minutes in the oven, the cookies were ready. It became flaky inside, the liver itself was quite soft, and the next day it remained the same. You can't taste the brine. The cookies are not very sweet, rather reminiscent of biscuits in taste. The recipe is excellent, we liked it. I recommend to everyone!

Thanks for the recipe! Having tasted freshly baked cookies, you can feel the aroma of pickle spices, but if a person does not know, he may not guess. The leftover dough makes the cookies tougher, next time I’ll bake them as is, I won’t roll them. I recommend this recipe👍 Good for budget and lack of margarine!

I am so grateful for this easy and fun cookie recipe! With its help, I diversified my taste sensations and satisfied my immense curiosity about the taste of pickle cookies and whether they would help in the mornings after a stormy feast. It reminds me of gingerbread cookies in a very lightweight and budget version. I made it strictly according to the recipe and so a small question arose - could I have more sugar? - and even powdered sugar didn’t help me with a sweet tooth in overcoming my sweet barrier.
