  1. STEP 1

    STEP 1

How to make Crispy cookies? Prepare all baking ingredients. Beat a chicken egg into a deep bowl to make the cookies crispy, you need to use a minimum of chicken eggs, on the one hand, they are needed to obtain an elastic and rich dough, but at the same time they contain a lot of moisture, which can deprive the cookies of their crunch and make them soft . Add sugar and whisk the ingredients until the sugar dissolves.

  2. STEP 2

    STEP 2

Melt the butter in a water bath or in the microwave, let it cool to room temperature. Pour the melted butter into the bowl with the egg mixture. Stir the mass.

  3. STEP 3

    STEP 3

Sift the wheat flour, this will saturate it with oxygen. Add baking powder and mix dry ingredients well. Pour the flour mixture into the bowl with the liquid and knead the dough until it comes together. You may need a little less or more flour. Read more about flour in the article at the end of the recipe.

  4. STEP 4

    STEP 4

Mix the dough a little with your hands to form a ball of elastic and smooth dough. Place it in a bowl. Cover the bowl with cling film to prevent the dough from drying out. And place in the refrigerator for half an hour. Remove the rested dough from the refrigerator. It will become even more obedient and elastic. Read all the intricacies of making shortcrust pastry in the article at the end of this recipe.

  5. STEP 5

    STEP 5

Using your hands, roll out the dough into a long, thin sausage. Divide it into small pieces and roll them into balls. The dough is so docile and does not stick to your hands at all that you can do this without additional flour. Cover the baking sheet with parchment, grease it with butter (although this is not necessary), since the dough already contains it in its composition and should not stick to the parchment. Oven preheat to 220 degrees.

  6. STEP 6

    STEP 6

Bake the cookies for about 10-12 minutes, until lightly browned. If the cookies are baked at a lower temperature, they will be soft and will not be crunchy. Time and temperature are approximate, use your equipment as a guide. Read more about ovens in a separate article at the end of the recipe. Serve crispy homemade cookies with tea, coffee or cocoa. Enjoy your tea!

Using this recipe, I got very cool cookies that were crispy and tasty. Before starting cooking, I decided to increase the amount of ingredients so that there was 180 g of butter. This is easy to do using a special calculator, you can even change the proportions up to tenths) The shortbread dough is kneaded very quickly and easily, I added a teaspoon of lemon juice for flavor. I kneaded it in advance so that the dough had time to cool; I kept it in the refrigerator for 40 minutes. Then I rolled it into balls and put it in the oven. I made small balls, about the size of a small walnut. Be sure to leave space between the balls, because the dough will still grow in the oven. I got 40 pieces. According to the recipe you need to bake for about 10-12 minutes. I baked for 12 minutes at 180°, but the cookies were not cooked to perfection) They were baked, but there was a taste of flour. So I added another 6 minutes. This time the cookies were actually crispy! Therefore, you should always focus on your oven and the end result. The cookies are simply great, very tasty, crumbly. It’s especially good with milk and coffee, and great with tea too.
