STEP 1
How to cook currant and gooseberry compote for the winter? Prepare all the necessary ingredients. You will need very few of them. Gooseberries can be taken green or red. You can also take black, red or white currants; with each of these berries the drink will have a different taste. You can try taking a mixture of currants: both red and black. STEP 2
Rinse the berries thoroughly, tear off their tails.

Wash the jars with soda and sterilize. You can do this by steaming, in the oven or in the microwave. You can choose a sterilization method that is convenient for you by reading the article at the end of this recipe. Wash the lids and boil for 5 minutes. Place gooseberries and currants in a clean, sterilized jar. Choose the filling level of the jar according to your taste. But the more berries there are, the richer the taste will be. Boil water in a saucepan.
STEP 4
Pour boiling water over the berries up to the shoulders of the jar. Cover the jar with a clean, boiled lid and leave for 10 minutes. Then pour the water back into the pan and bring it to a boil again. You need to drain the water from the berries completely, so for this it is better to use a special drain lid with holes.
STEP 5
Pour sugar into a jar of berries; it is not necessary to put as much sugar as indicated in the recipe, you can add it to taste. Even with less sugar in the composition, the compote will not ferment due to the high content of fruit acids in the berries. Filling the berries twice is enough to warm the berries and prepare compote. It is not necessary to boil gooseberries and currants.
STEP 6
Gooseberries do not burst with this processing method, so there is no need to pierce them, which simplifies the process and reduces the preparation time for compote.
STEP 7
Pour boiling water over the berries again. Cover the jar with a lid. Let the sugar dissolve. Cover the jar with a sterilized lid.
STEP 8
Turn the jar over onto the lid and leave to cool at room temperature; it is better to wrap the jar in a towel for the cooling period.
STEP 9
