Step-by-step preparation

Cooking timeCooking time: 1 hr 30 mins
  1. STEP 1

    STEP 1

This cupcake only needed 7 ingredients.

  2. STEP 2

    STEP 2

First you need to melt the butter on a tiny fire. And be sure to stir constantly! It took about 10 minutes to melt.

  3. STEP 3

    STEP 3

While the butter is heating, you need to mix all the dry ingredients (coffee, flour, baking powder and sugar).

  4. STEP 4

    STEP 4

    Mix dry ingredients until smooth.

  5. STEP 5

    STEP 5

When the butter is melted, you need to cool it for a couple of minutes. After this add cream and eggs.

  6. STEP 6

    STEP 6

I beat the butter mixture with a whisk.

  7. STEP 7

    STEP 7

Next you need to mix the dry mass with the oil mass.

  8. STEP 8

    STEP 8

You will get a small amount of dough. It took about 15 minutes to combine and mix all the components by hand. Maybe with a mixer and faster.

  9. STEP 9

    STEP 9

The dough is very fragrant and beautiful.

  10. STEP 10

    STEP 10

I greased the molds with oil and filled them halfway. Fitting them into the molds took 5 minutes.

  11. STEP 11

    STEP 11

The babies go into the oven for 30 minutes.

  12. STEP 12

    STEP 12

After 5 minutes the dough has risen noticeably.

  13. STEP 13

    STEP 13

    10 minutes after baking starts.

  14. STEP 14

    STEP 14

After 15 minutes of baking, I turned the baking sheet to the other side for more even heating.

  15. STEP 15

    STEP 15

This is what happened. By the way, if you bake in small molds, then 20-25 minutes will be enough. And if you make one big cake, then 30 minutes is enough.

  16. STEP 16

    STEP 16

Cooled the finished cupcakes for 30 minutes. Then decorated with powdered sugar.

  17. STEP 17

    STEP 17

Everything took 1.5 hours (including cooling). Yum-yum!

I wanted to bake some small cupcakes for the holiday. I took the coffee cake recipe as a basis, but put the dough into paper capsules, so it’s more convenient for guests to take the treat. I kneaded the dough using creamy butter, which I beat with sugar in a mixer. Then I added eggs and 10% cream. Then she began to add sifted flour mixed with the rest of the dry ingredients. My coffee was in powder form, so it was completely lost in the dough. I once tried a cake with undissolved coffee granules and I liked those crispy, bitter pieces, so it’s worth trying this option too. The dough turned out like thick sour cream, it is smooth and homogeneous. Just at the last minute I thought that coffee muffins would go well with prunes. Well, I cut a handful of dried fruits into the dough). It really turned out very tasty! The cupcakes smell nice of coffee. They are moderately sweet, with a creamy aftertaste. The crumb is porous, soft, and has a crispy crust on top. I served these wonderful cupcakes with coffee and cocoa. The guests loved the treat!

By the way, the cake turned out to be moderately sweet and the taste of coffee was not felt at all. Although coffee granules look very nice.

I made coffee cake in a slow cooker. It's hot now, I don't want to use the oven. Bake for 1 hour 10 minutes. Delicious cupcake! But, really, the taste of coffee is not felt at all. The dough is airy, the cake turned out to be very tender. Thank you, JULIJA, the recipe is wonderful!
