Coconut balls with curd

A wonderful way to feed the kids cottage cheese. This is delicious! I have an eternal problem - I just can’t feed my little picky ones with cottage cheese in its pure form, so I’m always looking for recipes that “mask” it, so to speak) This recipe is just a godsend - cottage cheese without heat treatment is very healthy, and adding coconut flakes makes the balls very fragrant , tasty and similar to the well-known Rafaelki! A nice bonus is that the balls have a surprise inside and the kids will probably want to know what they got) They just flew away with a HURRAY!

  1. STEP 1

    STEP 1

    Required Ingredients

  2. STEP 2

    STEP 2

Wash the raisins, pour boiling water over them and set aside for 10 minutes.

  3. STEP 3

    STEP 3

We fry the nuts: you can do it in a frying pan, but since there are very few of them, I used the microwave, set it for 2 minutes - and it’s done! Instead of walnuts, you can take absolutely any: almonds, hazelnuts, cashews, peanuts - those that you have in stock

  4. STEP 4

    STEP 4

My cottage cheese is grainy - it can be rubbed through a sieve, but it’s faster and more convenient to use a blender. For such balls, it is better to take full-fat homemade cottage cheese, or 9% store-bought cottage cheese, like mine

  5. STEP 5

    STEP 5

Add sugar or powdered sugar here

  6. STEP 6

    STEP 6

    Add vanillin

  7. STEP 7

    STEP 7

If desired, add a little honey

  8. STEP 8

    STEP 8

Puree everything in a blender for a few minutes

  9. STEP 9

    STEP 9

We should get a homogeneous mass

  10. STEP 10

    STEP 10

Now add coconut flakes, mix well, we get a mass similar to dough

  11. STEP 11

    STEP 11

Leave a little for sprinkling the balls, 2-3 tables. l. will be sufficient

  12. STEP 12

    STEP 12

Take a little curd-coconut mass and knead it into a flat cake, make a small depression in the center where we put the filling, I started with a nut, but unfortunately I forgot to take a photo of this stage)

  13. STEP 13

    STEP 13

Form a ball with your hands

  14. STEP 14

    STEP 14

Roll the outside in coconut flakes

  15. STEP 15

    STEP 15

Next, I took 0.5 teaspoon as a filling. l. condensed milk, these balls are very delicate and you need to sculpt them more carefully than others

  16. STEP 16

    STEP 16

Then I made the filling from cherries (I used canned, pitted cherries in their own juice)

  17. STEP 17

    STEP 17

The last option is filling with raisins, which by this time have already steamed. But these are not all the filling options - you can take banana, dried apricots, prunes, various types of nuts, pieces of marmalade, or you can combine several fillings in one, for example, raisin nuts, cherry nuts, cherry raisins, etc. It all depends on your imagination and mood!

  18. STEP 18

    STEP 18

This is such a beauty we have! It's impossible to resist!

  19. STEP 19

    STEP 19

    Enjoy your tea!

I liked the recipe for homemade Raffaello-type sweets, since my child does not eat cottage cheese, but loves coconut flakes. I prepared 3 servings for testing. For the filling I chose crushed peanuts. I blended all the ingredients with an immersion blender until smooth. With wet hands, I formed balls with the filling and rolled them well in coconut flakes. I put the sweets in the refrigerator for an hour. The homemade Rafaelki sweets turned out great. They are very beautiful and fragrant, incredibly tender and with a surprise. My child devoured all the candies) The preparation is completely simple and not difficult. You can even make these sweets with your child. Coconut balls with cottage cheese are truly a godsend, perfectly disguised cottage cheese that is not noticeable in the candies. Amazing recipe! Many thanks to the author 😊
