Wash the carrots and potatoes in running water with a brush, peel and rinse in water. Rinse the rice several times so that the water remains clear.

    Rinse the chicken in running water and place in a saucepan. Fill with cold water, put on fire and bring to a boil. Cook in boiling water for 30 minutes. When boiling, foam will form that must be skimmed off. Then remove the chicken from the pan using a slotted spoon, cool slightly and separate the meat from the bones.

I prepare rassolnik a little differently. I really love the dish with barley and the addition of tomato paste.

This recipe turned out to be an excellent pickle for me. Finally, I found a pickle recipe that I like. The fact is that I don’t like pearl barley and the combination of tomato and pickled cucumbers either. And everything comes together perfectly in this soup. The rice and chicken are delicious on their own, and the pickled cucumber adds the necessary piquancy. By the way, I used lightly salted cucumbers and peeled the skin for greater tenderness.
