STEP 1

How to make classic pancakes with seasoning? Prepare your food. First for the test. Remove milk and eggs from the refrigerator in advance; warm ingredients will knead the dough faster and better. The fat content of milk is not important. The amount of sugar and salt is given for a well-salted filling; depending on its filling, change their quantity.
STEP 2

Wash and dry the eggs. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Take a bowl and beat eggs into it, add sugar and salt. Using a fork, beat the eggs until the white and yolk are combined. It is not necessary to use a mixer.
STEP 3

Pour the milk into the eggs and mix the mixture again.
STEP 4

Take a larger bowl and sift the flour into it. It is important to sift the flour; this will not only remove possible debris, but also saturate it with oxygen, which will make the pancakes more tender and soft. Please note that you may need more or less flour than I did. Focus on the consistency of the dough.
STEP 5

Pour a small amount of the egg-milk mixture into the flour. Mix the dough with a whisk. Thus, with constant stirring, pour in the entire liquid component in portions. This method - pouring liquid into flour, and not vice versa - will avoid the formation of lumps in the dough. You don't even need a mixer. The result should be a dough similar in consistency to thick kefir. Set it aside while you prepare the filling - the dough will become smoother.
STEP 6

Prepare the ingredients for the filling. I will bake pancakes with mushrooms, ham and cheese. In general, completely different products are suitable for baking - all types of meat and sausages, mushrooms, eggs, fish, herbs, berries, fruits, vegetables. Choose according to your taste and availability.
STEP 7

Wash the mushrooms well and be sure to dry them - excess moisture will prevent them from frying. I wash the mushrooms with a sponge and then lay them out on a paper towel. Cut them into small cubes.

Fry the mushrooms in a small amount of vegetable oil until golden brown.
STEP 9

Also cut the ham into cubes so that the filling is uniform.
STEP 10

Grate the cheese on a coarse grater.

Wash the green onions, dry and finely chop.

Combine ingredients for filling in a bowl - ham, cheese, onions and fried mushrooms. Stir and taste the filling, adding salt and pepper if necessary. This will depend on the saltiness of the cheese and ham.
STEP 13

Heat a frying pan over medium heat. I have a special pancake pan with a non-stick coating. Grease the pan with vegetable oil. It is more convenient to do this with a pastry brush. Pour a portion of batter into the pan and spread it in a circular motion across the bottom. Spoon the filling onto the dough and use a spatula to press it into the dough. Pour a small amount of dough over the filling. Fry the pancake until golden brown on one side, then flip over to the other.
STEP 14

After turning over, press the pancake with a spatula so that the baked goods adhere to the pancake more tightly. Fry the pancake until golden brown, then remove to a plate. In this way, fry all the dough, greasing the pan with vegetable oil before each pancake.
STEP 15

Serve the finished pancakes immediately to the table - they are good hot, piping hot. You can serve them with sour cream. Bon appetit!
