STEP 1
How to make classic lazy dumplings from cottage cheese? Prepare your food. Cottage cheese is suitable for any fat content, but dumplings will taste best from rich, rustic cottage cheese. The amount of flour is approximate, it may take more or less, it depends on the moisture content of the cottage cheese and its properties. STEP 2
Take a bowl, put cottage cheese in it. There is no need to rub it through a sieve, even if it is grainy. After all, these are lazy dumplings. Everything is done quickly and easily. Break an egg into the cottage cheese, add salt and sugar.
STEP 3
Mix cottage cheese with egg until smooth.
STEP 4
Start adding flour one spoon at a time, stirring after each addition. The dough should eventually become thick and come together in the center of the bowl. But don’t overdo it, you don’t need to make it too hard - the dumplings will turn out floury, not curd-like. I had purchased cottage cheese with 5% fat content, it took exactly three heaped spoons of flour. If your curd is very wet, add more.
STEP 5
Dust the table or work surface with flour. Take a small portion of dough. Dip it in flour and roll it into a long sausage shape 2-3 cm wide.
STEP 6
Cut the sausage into strips about 1 cm wide. I always cut it slightly diagonally to make diamonds. My mother also did this, and she spied on it in kindergarten. Transfer the finished portion of dumplings to a board sprinkled with flour. Make the rest of the dumplings in the same way using the entire dough.
STEP 7
Boil water in a small saucepan or saucepan and add salt. Place a portion of dumplings into the water. Don’t throw everything in at once - it will cook too tightly for them and they will stick together. Stir so that the dumplings do not stick to the bottom. Boil the dumplings for a minute after they float. There is no need to cook longer - they may fall apart.
STEP 8
Using a slotted spoon, remove the dumplings to a plate. Immediately add the next portion and cook it in the same way. Serve the dumplings hot, with butter or sour cream. They are quite a bit sweet, you can serve them with condensed milk or jam. I like to sprinkle dumplings with sugar on top.
