The mass should turn white and noticeably increase in volume, and the sugar crystals should completely dissolve. Draw a line with a whisk; if it does not disappear within 1-2 seconds, then the eggs and sugar are beaten well. If the mark immediately spreads and disappears, continue whisking.

    There is no need to peel the apples. Cut the fruit in half. Remove the core with seeds. Cut into neat slices about 1 cm thick or small cubes. To prevent the fruit from darkening, sprinkle it with lemon juice. The more apples there are in the baked goods, the tastier it will be. But don't overdo it. A large amount of filling will not allow the dough to rise to the desired size.

    Take a round mold (⍉ 22 cm). The container may be a little larger, but then the cake will not be as tall. Line the bottom with parchment. Or grease it with butter or refined sunflower oil. The main thing is not to overdo it with fat, as this will negatively affect the baked goods. Sprinkle the bottom and sides of the pan with flour or semolina. Place apple cubes. If you cut into slices, fan them out.

I always prefer this recipe. There are similar ones on the site. But this recipe, I think, has ideal proportions of ingredients. It turns out moderately sweet, the number of apples is sufficient, which is very important, they do not clog the biscuit. Photo 1: When I filled the apples with dough, I twisted the mold several times counterclockwise, and then raised the mold up and sharply lowered it down. Those who bake biscuits gave advice about such manipulations. This is what I do. Photo 2: I decorate Charlotte, traditionally, with apple roses. Hello. I have always prepared charlotte according to my mother’s recipe, but sometimes I want to diversify the usual pie with another recipe. And I will thank you very much for the simple and very successful recipe! I always laid thin slices of apples on the bottom of the mold in a beautiful fan and filled them with dough. With this arrangement of apples, the dough is baked as a clean sponge cake without filling. And then I made it chaotically (in general, I’m a perfectionist 🫣) and it turned out even tastier than my usual tall sponge cake with an apple cap 😅🤪I always add salt. Not after beating eggs with sugar, but at the very beginning. I’m even surprised that attention was focused on this and, judging by the reviews, there are people who do not add salt to sweet pastries🤔🙄🤷🏼‍♀️I added a generous amount of apples 3.5-4 yellow ones from my grandmother’s apple tree near Krasnodar))) is also a departure from the usual, as I like to add sour apples so that there is a balance of acidity and sweetness. The charlotte turned out not super tall, but very tasty! Thank you very much! I baked it between times at two in the morning, because the next day the kitchen was taking a break from me) this did not prevent the pie from turning out tasty and aromatic 😋❤️

Maria, thank you for another wonderful recipe: classic Charlotte with apples in the oven, lush! I'm a fan of cooking without baking powder. To be sure, I still decided to beat the yolks and whites separately, because before this was always a win-win option. I showed off and accidentally beat the egg whites and sugar until almost glazed; they grabbed the flour very tightly (to which I also added a little more for some reason), and the dough became a little tight. I wasn’t too lazy and beat 1 more egg and everything returned a little to its place. Most likely, if not for this joint, the dough would have been even more airy, but even so it was quite fluffy. My husband said that he is more familiar with the “charlotte sole”, but you shouldn’t add more apples to this dough - it will fall off. Happy culinary meditation everyone! Alena

I’m new to cooking, but for the sake of a girl I’m ready to conquer the heights of culinary art, and I’m glad that this site and in particular this recipe helped in this matter. This is my first review so don’t judge too harshly. I wanted something tasty from baked goods and easy to prepare, I liked this option. We did not deviate from the recommendations and proportions. I cooked the charlotte without salt and it turned out very tasty and fluffy. Peeled the apples. I pre-greased the mold with coconut oil, it added a subtle aroma. Easy recipe, great results. Thanks to the author!

I remember my grandmother gave me a recipe for charlotte. a glass of flour, a glass of sugar. 3 eggs, a pinch of salt, a pinch of baking powder (slaked soda) and a lot of apples. A lot - that's almost a whole kilogram. This charlotte always turned out wet. The abundance of apples is of course very healthy, but the pie was not lush and rather it was baked apples in a moist, loose mash. I decided to try this recipe and was right. Very similar proportions, but half as many apples. I really liked the result. This is the only way I will do it from now on. I baked one, liked it, and immediately baked a second one))) At my house they love charlotte.
