STEP 1

How to prepare fresh cilantro for the winter? This simple recipe will show you how to do it quickly and quite simply. After all, it contains only two or, if desired, three ingredients. The main thing is that the greens are fresh and young, then the preparation will be the most fragrant and bright.
STEP 2

Carefully sort the cilantro, removing wilted, yellow or damaged leaves, and cut off the roots. Check them especially carefully for insects and dirt. We don’t need the former at all in our food, and contamination can ruin the preparation. In addition, the soil may contain the causative agent of botulism, which can lead to dire consequences. Wash the greens thoroughly and dry them on a paper towel; they should be completely dry.
STEP 3

Wash glass jars thoroughly in hot water and baking soda and rinse. Then sterilize the jars in any way convenient for you. If the jars are small, I like to sterilize them in the microwave. Pour some water into clean jars and heat at full power for 5 minutes, drain the water and dry. This can be done in the oven or over steam. Boil the iron lids after boiling for 10 minutes, then dry them.
STEP 4

Cut the dried cilantro into salad as usual and pack it very tightly into jars up to the shoulders. After this, pour vegetable oil over the greens. There should be no air left in the jar, otherwise the product will deteriorate very quickly. If desired, you can mix vegetable oil with coarse, non-iodized salt and fill the jars with it. You can use any deodorized vegetable oil; unrefined oil will kill the aroma of cilantro.
STEP 5

It is best to store this cilantro preparation in the refrigerator on the bottom shelf. Once the jar is opened, it should be used within the next few days. Bon appetit.
