Ciabatta bread in the oven

Fragrant, soft, fluffy Italian bread! Ciabatta bread in the oven has a crispy crust and an airy crumb with large, unevenly distributed porosity. It's great for sandwiches. Of course, you can buy it in the store, but you can also bake it at home.

  1. STEP 1

    STEP 1

Let's prepare the ingredients according to the list. You only need a few ingredients to make this bread; you can always find them at home. The main secret to making successful bread is to let the dough sit properly.

  2. STEP 2

    STEP 2

Pour warm water into a bowl, add salt, dry yeast and a little wheat flour, mix the ingredients so that the bulk disperses in the liquid.

  3. STEP 3

    STEP 3

Sift the wheat flour and begin adding small portions into the bowl, kneading the dough. The dough should be a little runny and sticky, so it is important not to oversaturate the dough with flour.

  4. STEP 4

    STEP 4

Knead the dough a little with your hands, adding flour if necessary, and put it back in the bowl. Cover the bowl with a towel and leave overnight in a warm place. The dough should double in volume. We knead it and move on to shaping the bread.

  5. STEP 5

    STEP 5

Sprinkle wheat flour generously onto parchment greased with vegetable oil. Place the dough on the flour. Despite the fact that it seems liquid and soft, it holds its shape quite well.

  6. STEP 6

    STEP 6

Roll the dough in flour, giving it a loaf shape. Transfer the parchment to a baking sheet. Cover the bread with a towel and place in a warm place for two hours.

  7. STEP 7

    STEP 7

Preheat the oven to 220 degrees. We place the baking sheet with the bread in the oven, place a fireproof dish below, pour water into it (I poured water into the second baking sheet and put it in the oven two notches lower) so that the bread rises well, but does not burn.

  8. STEP 8

    STEP 8

After 20 minutes of keeping the bread in the oven, remove the dish with water and keep the bread in the oven for about 10 more minutes, let it brown. Remove the bread from the oven, let it cool, and only then cut it into portions. If you start slicing the bread while it’s hot, the pores in the crumb may become compressed, the crumb will become dense and lose volume. The ciabbata bread is ready, serve it at the table as a base for sandwiches or with hot soup. Bon appetit!

After trying to bake sourdough bread, I fell out of love with yeast-based bread. But this one seems to be quite simple in composition but the preparation process is slightly different, it just captivated me) such an incredible result! Crazy aroma and crispy crust! So in our family, Ciabatta bread in the oven has become one of our favorites! Along with French bread, Darnitsky and Borodinsky, we now alternate cooking.

I really liked the recipe for ciabatta in the oven. It turns out crispy and soft inside. But . I wouldn’t be me if I hadn’t tried to prepare a recipe I liked differently.. My family and I were fascinated by the ciabatta baked in a bread machine! It turned out to be very, very crispy and very, very tender inside. Very porous. Not only is the inside porous, but the crust itself is porous. Don't be afraid to add a little sugar, just a tiny bit of 1/4 teaspoon and the ciabatta will open up much better. I used fast acting yeast. I was very afraid that it wouldn’t work out and I’d have to throw it in the trash. But the result amazed me. I have a Redmond bread machine. I tried to set the classic bread mode, the crust was dark (it wouldn’t burn, it would allow it to reach the consistency required), the bun came out at 1/2 - 750 g. The whole procedure of baking and rising the dough took a total of 3 hours. It is easy to remove from the mold. I am the mother of three beautiful children, so this option for preparing my favorite bread is the most optimal, since there is not always time for standing. My past experience gave me the idea to try this recipe in a bread machine. The first time I tried to make ciabatta as shown in the recipe. It turned out well, everything rose and was baked, but I wasn’t happy with the result (it didn’t rise enough and was a little damp). I decided to try it a second time, but I decided to make the dough on a bread machine. It turned out great. When I took the dough out of the mold, I was surprised by how well the dough came out and how porous it was when removed. This is where the desire to try baking in a bread machine was born... Maybe I’m repeating myself, but this is an excellent option for lazy and time-poor lovers of this delicious bread. I got an unforgettable impression from this bread when I tried it hot, with cold milk and condensed milk!! Just a pleasure. Unfortunately, the photo doesn’t convey the smells and tastes, but it’s worth a try.

Is it possible to add a little oatmeal? Somehow it never occurred to me to bake it myself, I thought maybe there was some specific technology, but it’s all so simple! I buy it often, I really like to cut it into pieces, drizzle with olive oil and brown in the oven... Well, if yours comes straight from the oven, you won’t have to brown it :)

Wonderful bread! Here's my ciabatta. I made the dough overnight and baked it in the morning. Ciabatta translated into Russian means “slippers”. My “slipper” rose well, the crust was crispy, the crumb was springy and spongy.
